To save time in making and posting some of my videos, I sometimes have to resort to cutting down the audio. (I do everything myself from conceiving the framing of the video to the final editing of the audio and video.... And sometimes, I run short of time, unfortunately.) In that case, I try to pick recipes that don't call for too many tips. And the few that are essential, I make sure to add them as printed messages on screen. But I promise, these 'partially silent" videos will be kept to the minimum.
I have a query about the amount of liquid used in the pulao, it comes to around 3cups coconut milk and water for 11/2cups of rice. If the rice is shaela basmati (par boiled) then it absorbs the liquid, where as if the rice is basmati then it becomes sticky for excess of liquid. Kindly clarify. No doubt your hard work, efforts and explanations of the recipies are worth of praise. Thanks a million for the good work you do towards the foodie society. Philip, the proportion of 1 : 2, that is, using liquid that's double the quantity of basmati rice is perfect for cooking the pulao in a pressure pan. If you add less quantity of liquid, the rice will get burnt. But if you use double the quantity, the rice grains cook perfectly, and the pre-soaking together with the lime juice, keeps the grains separate and prevents the pulao from becoming sticky. However, If you want to cook the pulao in a pot directly on the stove, then start with a little less liquid. That is, 1 cup of coconut milk, and 1 and 1/2 cups of water for 1 and 1/2 cups of rice. Sure, Asim. Those who prefer a spicier version, could throw in a few green chillies. But traditionally, Goan dishes are only mildly spicy. Of course, Goans who who love spicy food, do add more chillies in their cooking. It's a matter of personal preference. Turmeric is added in Goan pulaos for the traditional yellow colour.

Goan pulao contains turmeric to get nice Color and chillies are optional as Goan food is not on spicy side. Hope this helps.
