  • 超简单蒸香兰蛋糕, 无需打发, 不担心消泡, 又香又好吃,口感柔软又蓬松.
    Super simple steamed pandan cake, delicious, soft and fluffy.
    Ingredients 食材料:
    230g plain flour 230克普通面粉
    30g corn flour 30克玉米粉
    90g castor sugar 90克细砂糖
    100 ml coconut milk100 毫升椰奶
    100 ml pandan juice 100 毫升班兰汁
    2 eggs (62-63g each with shell) 2粒鸡蛋(每粒带壳重62-63g)
    1/4 tsp salt 1/4 茶匙盐
    1 tsp instant yeast 1茶匙速溶酵母
    1/2 tbsp corn oil 1/2 汤匙 玉米油
    cake pan size: 7.5 cm (H) x 16.5cm (w)
    蛋糕盘尺寸:7.5 厘米(高)x 16.5 厘米(宽)

    Hi Zhen , thanks for sharing the recipe. I had tried it yesterday. It came out fluffy and soft. I was very happy to see that it is not shrinking. When I slice it I don't understand why my cake texture is not as smooth as yours. It has a lot of small bubble holes and its very dry and crumby. When I eat, its very dry. I need water or coffee to flush it into my stomach to avoid being choked. Pls advise and reply soon as I wanted to have a 2nd try. I followed your recipe accurately. Thanks.

      It may be due to the high degree of water absorption of the plain flour that you are using, please watch carefully the batter consistency must be same as the one in my video, you can slowly add in extra coconut milk to achieve it, if required if your batter is too thick, and do remember use only medium flame (NOT high flame) to steam for 35 mins.       晚上好Sally, 我的蒸盖子是特制的, 蒸汽的水不会滴回蒸鍋的.如果您是用竹蒸笼也不会有水回滴的问题。但是如果您的蒸鍋是有水回滴的问题, 那就要盖好蒸盘或是把蒸鍋盖子用块大布包好。谢谢

      Good morning, steam on medium heat for 35 minutes and turn off the heat. Sit for 5 minutes before taking it out. Please refer to the video time of 5.40. thanks

    Do you mean after steaming for 35 mins, turn off fire and leave the cake inside the steamer for another 5 mins before removing it out?

    可以用更多的鸡蛋代替牛奶等液体吗?比如只用鸡蛋。

      可以的,全程以160℃(要留意你的烤箱温度的准确性),下火先烤35分钟后,转去以上下火再烤10-15分钟至到上色或烤熟为止, 去壳后鸡蛋的重量大约是54克。谢谢

      很大可能你所用的酵母已經開始失效了,新买的酵母如果没用完要放冰箱冷藏,不然易失效。又或是你的室温是很低,我的室温33度用时50分钟到达90%。谢谢🙏

    Love the texture of the cake. Can use pau flour to substitute the normal flour? What is d size of your mould used?

      这道食谱糖和粉的比例大约是1比3,其实它的甜度适中。如果你想再减少糖你可以尝试把它减少从90克到70克。谢谢

      @@cklee7385 谢谢你的来访我的频道,如果你是很注重建康的人士仕恭喜你来对了频道。在我的食谱里强调的是以建康为主,蛋糕的膨松方法多以酵母和蛋白霜为主,极少使用发粉的。全天然水果和薯的色素,无人造色素除了祭拜版发糕外, 低糖(以粉和糖的比例)比如~鸡蛋糕1比1的比例又要加入气水的食谱是不会出现在这里的。
