Understanding How to Tamp Correctly for Espresso Brewing

    If your bench is lower than in the video - this is even better for a more ideal position - where you turn your body and have your shoulder almost directly over the filter basket. The 90º bend in the elbow here is not necessary, just so long as you have your palm facing inwards, and maintain a straight line from the top of the elbow through the worst - you may even be able to have your shoulder line up above your elbow, and this fill further add protection and make tamping easier.
    In using VST filter basket - the recommended size of the tamp head is 58.3mm. Most tamping ranges now have this extended 58.3mm tamp head. Just be aware the 58mm alone - whilst it will still work OKAY, generally are best used only with generic filter baskets. On the other hand - a 58.3mm tamp head may get stuck in a generic filter basket. So always check what size diameter basket you have and purchase the right tamp for you.

    Wow this made me return my espresso machine. This is scary af. Never realized how complicated this was. Perfect temp, perfect level to tamp, perfect pressure, worry about perfect grinds, perfect flow, and ten other things I haven’t had the time to get into. And doing all this while I’m still waking up. Wtf. I’m out!

      FWIW, not sure if this was totally serious or not, but you can essentially ignore ALL the rules of espresso brewing and still enjoy your espresso. Most days I am very lazy. My grind is too course or fine, I overfill the basket, I tamp 2-3 times to get it close to level, I over extract, and then I turn it into an Americano with some maple syrup anyways and enjoy the heck out of it. I find the beans I use matter even more than the brewing technique, as I really love fruity light roasts. Coffees that are really dark roasted or are bitter from the start tend to be harder to extract good flavors from, though some can be rewarding. Best to just start brewing, see what you like, and experiment when you feel like it.

    Some things I'll do (levelling coffee grounds), some I do already (grabbing the tamper) and some I won't for my 2-4 coffees a day with the simple machine I've got.

      Tamp with both hands and in proper form so you don't create an imbalance.

    yayyyy, i always flip my tamp to make sure it doesn't fall out but for some reason today it kept falling out after every tamp i did and i just tired in one time after watching this video and it didn't fall out :D

      Until the coffee stops compressing really. We'll say 15lb here, 10 pounds there - but it's really until as you feel the coffee compacts, lean in to it as much as it is comfortably and you don't slip - and then it's done. 🫶

    Would threw in my 5 cents, not all the tampers (even if they are of the same kind) are designed to allow you hold it with fingers and at the same time apply proper force with handle comfy laying in your palm. That's something to be considered when choosing a tamper, better being checked beforehand.

    Chuck Norris doesn't tamp. He simply folds his arms and pauses for a moment while the coffee retreats into the thingy. The coffee doesn't want any trouble.

    That much pressure is WAY over 30lbs. Results in slow extraction and bitter espresso.
    Get out a typical body scale and put it on the counter. Test how little it takes to hit 30lbs. You’ll be surprised. I can over tamp with my 18 bar La Marzocco and nothing comes out despite it has more pressure than 95% of systems.

    As a construction worker here I promise, you will never get injured by tamping incorrectly. That was a little silly lol but very good video love making my espresso 1st thing in morning and this was super helpful!

      hhaha that's certainly the case for a 1-2 day a tamp Home Barista - but 300+ -hand tamping Cafe barista - over the course of 12 months - that's 90,000 tamped coffee!

    Drawn out over complicated explanations, failed to address the amount of force required and explanation of the problem with too much pressure.

      thanks! the amount of force required is one that has been slowly diminishing for awhile now. I'd propose there's a minimum force requirement - however a maximum pressure is harder to define - and in all these examples, depends on coffee, grind, machine etc.
      My experience as a barista on bar has taught me, pressure is important - where relieving a barista who tamps soft, versus I, who tamp hard - I notice the shot times immediately, so I have to soften my tamp or adjust the grind coarser to fix the issue - but for someone less practiced - and not making 300+ shots a day - the most reliable and consistent practice I could suggest is to rely on your body weight leaning against the shot. This doesn't change rapidly from day-to-day. Something I once heard that has stuck with me is: Amateurs practice to get good at something, Professionals practice never to be bad at it.

    Wow. What kind of zumba-pilates-yoga-tai chi-contortionist nonsense is this? I honestly have never seen any barista or CZcams coffee "expert" go through such silliness to tamp. As soon as I saw the attempt to get the elbow at 90° my previously torn & repaired rotator cuff said "F*ck no." Maybe I should cancel my espresso setup orders and just stick to my moka pot.

      hahahah that's fair enough - I should have said at the start that move only as you feel comfortable and if you feel any pain stop. Jst like a good yogi teacher would! 😂
      The 90º bend isnt the focus - it's really making sure you use a straight writs and pressure flows from the shoulder, or hips vs pushing down through the elbow in to the wrist.

      I've attempted to explain how to tamp correctly in a more succinct fashion, with some notable success - as long as the student takes care of what they are doing. However, in this particular video - mainly suitable for barista tamping 150-300 times a day - the importance of consistent, effective and safe repeatability cannot be understated. RSI will come on quick if you're new to the game.
