I honestly don’t know how you can afford to live in Alaska. Things seem so expensive. I’m in Ireland and think we are expensive . But I couldn’t imagine surviving in Alaska. I keep thinking about both of your baby girls, the one who will join you and her twin who you’ll never forget. It’s a special journey for you all , tough and exciting st the same time. Sending love.

I love how you teach all your children to cook and do chores around the house. They will be much more independent and thankful later on. Even Everett is learning to cook and seems to enjoy it. 😊

Oil isn't the reason spaghetti noodles don't stick. The oil floats above the water while the noodles are below. What prevents the noodles from sticking is stirring often. Oil only helps after draining and tossing with oil. I was a cook in the army.
You are so right. I was saying yes without really thinking.
I worked at Costco for over 32 years. Retired in 2019, right before the pandemic! Anyway when you are shopping by yourself, at the door, register and exit door you can ask for help shopping, loading at register and loading in car. I just worry about all the lifting you are doing. Even 8 cans of corn can get heavy after a while! Take care and happy holidays to you and your family!

I agree. Everett is SO adorable and such a sweet, precious little boy. He is going to go from the baby of the household to being replaced by the upcoming baby girl. I hope he doesn't feel displaced too much. 😕
I do many freezer meals, mostly with leftovers, such as pot pie, shepards pie, pasta bakes, soup (!). However, I am cooking for two! And my Mom is 93 - I think Everett eats more than she does. You look and sound wonderful. Glad you chose the blue/green pull over. Color! 🥰

Today i went from the wooden stairs with damp socks. I was wearing a vacuum cleaner. I slipt from the top and fell to to bottom. I have a lot of bruises and pain. Not fun! I should have worn slippers

This is why it's so important that we use subsistence in Alaska because the prices will gouge you 😂 We live on a lot of fish, moose, deer, caribou and anything else we can get our hands on. Not everyone can live here. Especially in more remote areas. It takes a tough person to live the Alaska lifestyle 😅
It is for sure not for everyone. I would say people tend to LOVE it or hate it here, not much in between. I am always thankful for any meat that we do get!

I know my limits and carrying it all up the stairs is where I have to stop!! The ice in the neighborhoods is so bad, I am so grateful for a garage to park in. Thankfully all the parking lots have been graveled and plowed and are not nearly as icy!

Not that you need any praise, but… you’re doing an amazing job raising your boys! It’s so refreshing to see children, especially boys, doing what it takes to keep a family going. I’ve raised my son, now 21, to be the same way and I’m raising my 6 year old daughter the same way! Our world can be a scary place sometimes… and it’s so nice to see you and your boys doing such a great job! Hugs!

If you ever needed ground beef again, ask the guys in the back for a round of ground beef. It’s cheaper, you get 10 pounds and they usually have 93/7 which for us is perfect since our family of 5 is a game family too.

The meat prices aren't that much higher than here in OK. Not considering being in AK and shipping costs incurred by the businesses. I just priced chuck roast for our Christmas dinner and it was $26 for a 5lb roast. Hamburger meat is dependent on the type/levels of fat from around $4-$6 a pound most places. Steaks are ridiculously high and chicken again depending on the bone-in or out, skinless or not, which part of the bird or whole bird can range from $2/$3 a pound to $5 a pound. Plus anything organic is even higher. Pork products are only slightly cheaper than beef and again all depends on the cut. Around $150-$180 of this haul was just meat. Being single and disabled makes grocery shopping hard but buying in bulk, breaking it down and meal prepping the meat makes it last longer and more cost effective. Being raised to always be prepared with a freezer of food also helps.

Lauren, that was a haul at your stage. You might consider ordering a quarter side of beef or check the box programs for grass fed beef which often have chicken too.
Per lbs it's often half the price you spent for more.
The boys are older now, consider getting help splitting a list after school.

I know what is like having expensive groceries bills, lol. I have 3 boys & I was taking care of my Dad. That's been quite a few years now, as we are empty nesters now & my Dad is no longer with us, but we did have 18 years of him living with us! I miss having a full house! I'm blessed to have 2 sons still living closing by and one is in Ontario, Canada. Looking forward to them all being here for Christmas!

Bananas in my town in Missouri are 68 cents for a bundle of them!!!!!!! Food is a lot cheaper here and that is not by the pound either lol
One item I just discovered at Costco and use a ton is a bag of chicken pieces that are cut off of the Rotisserie chickens. Cheaper than using chicken breasts. 😍

They are in the ready to eat deli meals usually (until the nite elves relocate them). Not sure it’s in all Costco’s.
Hey in Alaska! I’m in Western North Carolina. Close to the Tennessee border. In the Blue Ridge and Great Smoky Mountains. Whew! That was a lot. Anyway, I wanted to share a good and easy snack/meal. We called them “Little Pizzas” growing up. U use an English Muffin, break in half. Put whatever pizza sauce u like on the muffin first, then mozzarella cheese or even an Italian blend would work whatever u like, next add ur pepperoni or whatever toppings u want. Bake at 350 degrees for about 10 mins. Be sure to watch them tho so they don’t burn. I’m not sure about altitudes and what not that would make difference in baking where u r. When cheese is nice and bubbly, they r done. This is so easy ur older kids could make this themselves. Anyway, just wanted to share this recipe. Especially once baby is here. U will have ur hands full. Speaking of, I’m sending love and prayers ur way. I have 4 children and I can’t imagine what u r feeling. Prayers r the only thing I know to do for u and ur family. Hope u have a Merry Christmas and a very blessed New Year!
