The two juiciest beef burger classics to impress any guest!

  • I always get asked what the best beef burger patty is, so this week I thought I’d put two of the best to the test! Join me as I make these staples and find out which is my favourite! Recipe below.

    Recipe Smashburger
    Ingredients for 1 burger
    - 2 x 80g ball of mince beef 80/20 lean to fat ratio
    - 2 slices burger cheese
    - 1 milk bun
    - 1 tbsp mayonnaise
    - 1 tsp yellow mustard
    - 4 slices pickles
    - Small handful finely sliced iceberg lettuce
    - Few sliced (very thin) red onions
    - Softened butter for toasting the bun
    Method
    1. Start with prepping everything so it's ready to go, all the veg sliced and sauces ready.
    2. Slice your bun in half and butter both sides before toasting on a skillet or cast iron pan over a med heat.
    3. Turn the skillet or cast iron to high and place your 2 beef balls on.
    4. Place some parchment paper on top and press hard with a burger smasher or a pot.
    5. Remove the paper and season the meat.
    6. Once the meat is almost cooked through, scrape the patties up and flip, trying to get all the crispy brown pieces from the bottom.
    7. Once flipped, add the cheese to the top and once melted stack one on top of the other.
    8. Build the burger, starting with mayonnaise on the bottom bun and mustard on the top.
    9. Next the lettuce and onions on the bottom then comes the meat and finally the pickles.
    10. Bun lid on top and you're done!
    Recipe Steak House Burger
    Ingredients for 1 burger
    - 200g large beef patty, either grind your own or ask your butcher to fresh grind something for you
    - 1 sesame burger bun
    - 1 slice of Monterey jack cheese
    - Heaped tbsp caramelised onions
    - Butter for toasting your bun
    Method
    1. Season the patty with salt and cook your patty over a grill on high for 8-10 minutes or until you reach the internal temp you desire (50°C for Medium Rare, 57°C for Medium and 60°C for Medium Well)
    2. While the patty is cooking, butter and toast the bun.
    3. Once the patty is almost cooked, place the cheese on top.
    4. When the patty is cooked, remove it and let it rest for 4 minutes.
    5. To assemble the burger, start with the toasted bun, add the onion to the top and meat with cheese to the bottom.
    6. Place the top on the bottom and you are done!
    Recipe caramelised onions
    Ingredients
    - 3 brown onions, sliced thin
    - 1 tbsp butter
    - 1 tbsp olive oil
    - Salt to taste
    Method
    1. In a medium saucepan heat the butter and oil over medium heat.
    2. Once melted, add the sliced onions and a pinch of salt.
    3. Sweat the onion down, stirring often until they have halved in size.
    4. At this point, turn the temp to low and cook for 1 hour stirring every 10 - 15 minutes until soft and golden brown.

      Isn’t the reason you can cook a steak to med rare is because you sear the outside edges, the places that may have something contaminated touching. Also why you can’t trust the butcher’s grinder - who know what went through before your meat. If you grind your own you are adding in that exposed edge, adding contaminated to your mince. Unless you are trimming the edge before grinding. Most likely you have nothing to worry about but I find the reason to grind your meat at home a bit illogical for contamination reasons. Taste will be much better.

    You know what I love about this video? I mean, aside from it being a 10 minute video about burgers? It's no frills. 10 minutes, 2 types of burgers--a trendy fast-food style and a restaurant style--each presented as equally valid options, each with simple ingredients.
    You couldn't cut a second out of this video without losing _something_ that makes it great. What more could you ask for?

      i hate the XXL burger trend and it solely relies on social media marketing "look at the abomination infront of me" then its an overloaded monster you can barely eat and having egg, chili and 100 other ingredients on it only makes it a mix that has nothing to do with a good burger, hence why the actual top 5 burgers are the simple ones. 2-3 smash patties, onion and a good cheese is enough in my case. bacon is good too but it alrdy starts getting too much.

    I've been grating frozen butter into the (cheap) mince, making a steak-house style patty and cooking over charcoal. Some of the butter melts out and drips into the coals for a killer smoky flavour, and the rest stays trapped in the patty itself, cause everything tastes better with a bit of butter :). For anyone that has had a Ferg's Burger in Queenstown, this tastes as close as I can get.

      how do you do it without over working your burgers?
      I am having trouble not overworking my burgers, like...i don't when too much (work) is too much and when "it's still fine" (so i underwork and it collapses while cooking into mince clumps)

      @@goodlearnerbadstudent756 I'm not using a tonne of butter, maybe 100 grams for 5 burgers, and folding in a bit at a time. I'm not trying to combine it evenly, its intended to mostly melt and drip onto the coals.

    Love your video as usual chef, thank you. Good mention about chilling the head attachment on the grinder, I always forget to do that.
    Until now I have always just ground some gravy beef, about 80/20 mix and received good feed back. The thicker burger, med-rare is my preference, but I wouldn't risk it using store bought ground stuff. I'm also going to try going up-market by sourcing some dry age off-cut.
    Quick tip, if you want to accurately check your gas bottle level, pour boiling water from the kettle down the outside wall and you'll easily see the level of the internal gas!

    Great vid! All I know is that I crave both those burgers. I made steakhouse-style burgers for my son's birthday last year for the whole family... ground my own chuck and shortrib mix (I wouldn't have the stomach to grind a $100 Wagyu steak lol). I used marble cheddar instead of American, and I'm personally not much for caramelized onions unless it's for soup... it's raw onion for me no matter the burger. In North America we get sweet onions from Georgia... the famous Vidalia, or Walla Walla onions from Washington state. I imagine down under you get some variant of the Maui onion from Hawaii? It's like that... they're amazing on burgers.
    I like that you did the smashburger with just mustard and pickles... that's how I like it too. Too much "burger sauce" out there these days... tons of mayo and ketchup and hot sauce and worcestershire... I like all those things in their place, but all I need on a burger to be happy is ballpark mustard and pickles.

    Great video. I’ve been doing a lot of smash burgers lately, tinkering with seasoning and topping, but I think plain is best, with a touch of French Onion seasoning on the patties before the cheese goes on. Steakhouse burger are next!
