This is a gorgeous project. One which I would be keen to attempt.
It would be great if you could share links to the motor and esc equipment used.
I love making lightweight models but the electronics is a darned confusing hurdle to cross.

What is the deal with the propellers? Why 2 separate props?

With a single propeller turning clockwise, the whole aircraft wants to turn anti-clockwise, as a natural torque reaction. With two propellers, one turns clockwise & the other anti-clockwise, this cancels out the natural torque reaction affecting the aircraft, allowing for more precise control, essential for this type of flying.
