How to make Hiyashi Chuka (cold Ramen)

- Today we have a request from Shaowen Lo for Hiyashi Chuka. Hiyashi Chuka is not technically ramen, its more like ramen's cousin that only visits during the summer when its hot. Honestly, I've never made hiyashi chuka before this video but I found a couple of recipes and tested methods to make the toppings and I think it came out ok. If you have any tips for hiyashi chuka please share them in the comments below.

Ingredients:
Ramen Noodles
Cucumber
Tomatoes
Kinshitamago (egg ribbons)
2 Eggs
pinch of sugar
pinch of salt
Chicken breast
800ml Water
1 chicken breast
1 Tbsp Sugar
1 Tbsp salt
Gomadare 1:
3 Tbsp Nerigoma (or Tahini)
3 Tbsp Shoyu
1Tbsp Sugar
1 Tbsp Rice Vinegar
2 Tsp Sesame oil
1 Tsp Grated Ginger
100ml Chicken braising liquid
Goma Dare # 2 (I actually messed up in the video and forgot the soy sauce)
3 Tbsp Sesame seeds
3 Tbsp Shoyu
1 Tbsp Sugar
1/2 Tbsp Rice Vinegar
1 Tbsp Sesame Oil
1 Tsp Leekumkee Chicken powder
4 Tbsp Water
I messed up on Gomadare #2 and completely forgot to add 3tbsp of Shoyu. Funny thing is I still thought it tasted good. Anyways, if you're going to do Gomadare #2, don't forget the soy sauce.

LOVE hiyashi chuka! I sometimes throw the noodles in the sauce before plating and toppings, shredded nori is really good on here as well!!
I'll definitely make this soon. I live in Hawai'i too and coming from the east coast, it's still warm. Plus, there's a noodle store near me so I'll buy my noodles there.

Humid Mountains of WA reporting in, we hit high 90s yesterday with mean humidity and I made ramen yesterday anyways and gave myself mild heat exhaustion. I regret nothing and argue that the heat exhaustion probably worked off some of the carbs and calories.
Great video again! If I can request something for one of your upcoming ones, it would be “Taiwan mazesoba”. Note here that it’s famous in Nagoya, nobody really knows why they call it Taiwan style. Maybe it’s kinda similar to a Taiwanese dish...
honestly this would probably be my weekly noodle dish because it doesn't require much special tools and its a lot lighter. I can do light shoyu broths, but anything heavier and I just feel so lazy afterwards 😂
Hiyashi Chuka is so easy to make and you can make it ahead as long as you don't add the dressing untill last. You can add whatever you want as a topping just remember that it's meant to be cold not hot. I used toasted spam instead of deli ham or chicken. I also like to add dashi powder a bit of water to the eggs to make the tamago. If you can get your hands on soba noodles it adds a better flavor than regular ramen noodles.

Nince video! How do you make sure that the chicken reached the right temperature internally and was at that temp for enough time? I usually would cook it sous vide, but of course it's not a tool available to everybody
It's September, it's getting cold. Since I'm in the northenmost of Sweden it's getting colder than you can imagine... closer to freezing than I'm used to. But Ramen is in season for me ;)
Hey I made some standard ramen noodles for this ( just flour, salt and kansui following your recipe XD) and was wondering if those would go well here or would egg noodles work better?
