    I cut mine in half, scoop out the seeds put butter and brown sugar in the hole and wrap in foil and bake. When cooked scoop out the squash. That is how my husband likes his squash.

    I have never cooked squash but I planted one plant this year and your far it's yeilded about 30+ so I may end up trying all four methods by the time all the squash are ready to be picked :) thanks

      Annette Robertson you are blessed! I planted one pumpkin and it has don3 almost nothing. A few flowers but none made fruit- I think maybe it needed a husband plant!

    Great video as always :) Quick tip: Don't be afraid to fill up your oven with other veggies such as cauliflower and carrots when you're baking the squash. They last a few days in the fridge and I often throw roast veg into salads or just snack on them. Leftovers can puree it down into a tasty dip or just thrown in the freezer for later.

    I really love videos like this -- they take the fear out of those less used veggies. It would be awesome if you did more videos like these with those not as common vegetables -- Ie Brussels sprouts, Bok Choy, turnip, beets, etc. Thanks Alyssia!!

      +Mind Over Munch I like peeling the whole butternut squash. Throw the peels away. Continue peeling the squash to make a type of butternut squash noodle. As you peel it, they curl up and are so cute. Then I use a lightly greased casserole dish. Toss all the "noodles" in, stir in some meat sauce/pasta sauce(I like using ground turkey or ground chicken for the meat sauce). Spread some croutons over the top. Add a little parm cheese and top with some cheddar or mozza cheese. Bake in the oven. It's so delicious. My whole family loves it and has much less calories than a real pasta or lasagna dish. Oh yeah!!! Don't forget to save the seeds!! :D :D

      My favorite way to cook it is very simple but healthy: just cut the butternut Squash into cubes then steam the cubes in a pot. Finally add some honey. Then it's done ^_^

    I love pumpkin seeds, here in México they are called "pepitas" and they are sold wherever you go. But squashes are only available in fall. Looking forward to try this!!!

    I really like the' bake it in the oven before cutting it open' method. You're right....squash seems very intimidating. It would be so worth the effort though.

    Have never eaten a Butternut Squash, but grew some this past season. I am going to try the cut in half method, bake in the oven, and use a little butter and cinnamon. I cherish sweet potatoes and cook them whole, so I'd probably prefer this method. Thanks for this video.

    I process butternut squash the same way I do pumpkins. steam them in the instant pot for 8 minutes, puree, and freeze until i need it for baking :)

    I've used your 3rd method previously but after I diced them up, rather than in the oven, I've put them in my smaller crock pot with the temp turned to medium for about 6 hours. Frees up your oven during the holiday cooking. ! 😊

    Nice.., thank you for taking the time to video about cooking Butternut Squash. I never cooked Butternut Squash but it seems pretty simplex. My friend growing Butternut Squash & it took over half his yard..lol I think I might try cooking them like I would do for my Glazed Sweat Potato side dish with plenty of Brown Sugar..     I usually microwave the squash for a few minutes to get it softer to cut and it makes it a LOT easier to cube. I do a butternut squash casserole with kale and turkey sausage, then I do a banging butternut squash soup. Couldn't ever get use to it the sweet way though!

      I like butternut squash soup too. I roast (olive oil, salt cayenne pepper--to taste) the squash, onions, garlic and a Granny Smith apple, peeled and cored. Once done, I puree all ingredients with homemade veggie stock. I make sure to cube some of the squash for texture. I have it with a piece of artisan bread. Good stuff. How do you make yours?

    Thank you for this video!!! My husband came home with 2 butternut squashes someone had given to him. I have never cooked a butternut squash. Your explanations on how to cook them is straight forward and doesn't need any kind of strange ingredients (translation: something I don't already have in my kitchen). - - Edit: I cut it in half and baked it. I served it with butter and cinnamon as a vegetable side dish rather than regular baked potato.

      1 cup mashed, cooked butternut squash
      1/2 teaspoon salt
      1/2 teaspoon freshly ground black pepper
      1 pinch cayenne pepper
      1/2 cup mascarpone cheese
      1 egg yolk
      1/3 cup grated Parmesan cheese
      1 (16 ounce) package round wonton wrappers
      2 tablespoons butter
      1 clove garlic, unpeeled
      chopped fresh sage to taste
      1 tablespoon grated Parmesan cheese, or to taste Place cooked squash into a mixing bowl. Add salt, black pepper, and cayenne pepper. Stir in mascarpone cheese, egg yolk, and 1/3 cup Parmesan cheese, mixing until the filling is smoothly combined.
      Place a wonton wrapper onto a working surface. Wet the tip of a finger in water, and run it all along the outer edge of the wonton skin to moisten. Place about 1 teaspoon of filling in the center of the wonton. Fold the wonton in half to make a half-moon shape, and press the edges to seal. Repeat with the remaining wonton wrappers.
      Place a deep skillet over medium-low heat. Stir in butter and unpeeled clove of garlic. Remove garlic after two minutes and continue on low until butter is slightly brown.
      Meanwhile, bring a saucepan of lightly salted water to a boil. Drop the filled raviolis into the boiling water, a few at a time, and cook until they float to the top, about 2 minutes. Drain the raviolis, and transfer them to the skillet. Turn the heat under the skillet up to medium-high, and cook just until the raviolis are infused with garlic flavor, about 2 or 3 more minutes. Sprinkle with chopped sage, more black pepper, and extra Parmesan cheese to taste.

    My favorite way is to roast it cut in half lengthwise and then make a little savory (or sweet if you want, maple syrup and cinnamon, yum!) bread pudding mixture and fill the cavity with it.
    You can mix in a little lean sausage, sage, rosemary and a nice seedy bread with some egg and milk or water, bake it just like normal (making sure it doesn't burn, so you might want to cover it in foil when it starts to brown) and it's delicious! Plus you can get a little protein in without having to waste another pan!

    I am shocked that she didn't put sugar. In Australia, we put in sugar and butter (yes butttttttttter) ... yum :)
    The sugar and butter is always added in last to save calories and actually get a nice taste of it. I know others put cinnamon but I hate that ..... cinnamon belongs in baked goods (LOL)! I will try this this evening for supper :)

      in Belgium the same way :) ! extra butter ( real butter not margarine like some seem to do eww ) and a lot of people use sugar while I use honey instead ...

    I would recommend that you should not put olive oil on it if you are going to bake it at 400° F, as this is beyond the smoke point of olive oil.

      yes, light olive oil is fine though as it has a higher smoke point. I would avoid using extra virgin olive oil at high temperatures.

    Great video, I made it half way in the microwave while preheating the oven.
    Then baked it at 400 for 20 mins with cinnamon and brown sugar.

    It is finally in the oven. It's been sitting on my counter throughout the winter. It is in the oven tonight, cut and covered with olive oil, salt, pepper, nutmeg and cinnamon. It is becoming a side dish for meatloaf and rice. I really love your video here.

    Alyssia, I actually cook my butternut squash a different way. I cut it in half raw, place downside on a sheet pan. I prepp it by rubbing a little olive oil and in the hole wjere the seeds were, I place a handful of cinnamon basil. I also use it with sweet potatoes. Absolutely delicious!

    I just harvested my crop of butternut squash, yesterday I cut one in half sprinkled with salt and pepper then wrapped in foil and placed cut side down on my grill for about 45 minutes, they turned out excellent! Thanks for the video by the way

    I've never cooked one before but I do roast my own pumpkins for puree (so that I can control salt and preservatives) so I would probably do the cut in half method! Also I think that you should totally do a butternut squash recipes video!
