    Ingredients for Stir-Fried Crab with Curry Powder Recipe:
    250g Crab Meat
    3 eggs
    1 cup evaporated milk
    40g celery, chopped
    20g spring onions, chopped
    20g Spur Chili , sliced
    20g garlic, minced
    50g onion, sliced
    1 tsp white pepper powder
    2 tbsp Nam Prik Pao (Thai chili paste)
    2 tbsp Thai chili paste oil
    2 tbsp curry powder
    2 tbsp oyster sauce
    2 tbsp soy sauce
    1 tsp sugar

    Hi. This looks delicious! I’m going to give it a try. Instead of evaporated milk, can I use coconut milk? As this is a Thai dish, instead of using curry powder, can I use Thai red curry paste? I’m a little worried it may not work with the Thai chilli paste, which is sweet.
    What kind of curry powder was used in your recipe? Is it Indian curry powder? I want to follow your recipe as much as possible. 😊

      Hi! Thanks for your interest. Absolutely, coconut milk can be used as a substitute for evaporated milk, adding a lovely richness. However, for this recipe, we specifically use curry powder to achieve the desired flavor profile, not Thai red curry paste. The curry powder I prefer is Waugh's Curry Powder, which I purchased from Thailand. It's available on Amazon for convenience. Another excellent choice is AMRAK curry mild, which you can find at an Asian store. These will give you the authentic taste the recipe is designed for.
