Hey T-Roy, I just watched your unwrapped baby back and spare rib video. These are excellent looking ribs. Having a hard time deciding what to try this weekend. I think my wife will prefer less bark.
I picked up some B&B lump and filled up my 18” WSM and it lasted for two 6 hour rib smokes. First time actually used an 18” and I smoked 6 racks of spare ribs coiled up, and they were a hit. I can only imagine how many coiled racks of ribs I can fit on my 22” WSM!
Another great video, and I just realized I haven't done baby backs on the WSM yet! That needs to be rectified. So many great recipes. That looks awesome. Cheers.

I have a good idea of how I'm going to do it but wanted to check out a few videos to see how others were doing it and I ran across your video in the process. Your ribs looked great! I learned the hard way a few years ago that the Costo 3-pack ribs already had the membrane off. Which is great... but I was a bit confused at first LOL
Yep. This was an early video of mine and I always used the water pan with water. Lately I’ve been using the FireDial without a Water pan OR nothing and cooking direct heat. The WSM is an amazing grill and so versatile.
An uncle of mine gave it to me, so luckily it didn’t cost me anything. HOWEVER, I have to say it’s completely worth the money. Makes life so much easier. I always worried about chipping the lid when putting it down. Love that hinge!
I do baby backs at roughly 2 hours unwrapped. 1.5 hours wrapped and about 1 hour unwrapped again. I bought the Jealous Devil directly though them. But you can also find it on Amazon.com.
Did you not use any wood chunks? Forget to show them? I like two things, that spritz bottle (what is that thing??) and the recapture of the foil "juices" to re-use as a baste/sauce. I haven't seen either of those things before. Also, how was installing that lid hinge?
Dan Pera I did not use any wood chunks on this particular cook. Only the lump charcoal. Learned about it from Harry Soo’s videos. The lid hinge was a breeze. Just make sure to take it slow and mask off the area with take so you don’t chip the coating too bad. Eric Mooney Yes sir. I don’t think I mentioned it, which I should have. I did have water in the water pan. I think it helps regulate the temp much better.
I noticed you didn't put any wood on and only used coals? I'm about to do my very first Smoke tomorrow and have coals and wood chunks. Would you suggest I only use coals?
I only used lump coals for this. But I do also use wood chunks at times. Depends how much smoke flavor you’d like. Either way it will give you great ribs.

Looks beautiful! Love the wsm's! Got all 3 sizes, never really use the 14" though. You load up that 22" with charcoal you can get 10-12+hrs easy.
I agree!! The WSMs are amazing. I was shocked at how long the can cook for on a single load of coals.

You could leave them in the foil and baste it like that (meat side up) for the last hour. I use to take em out the foil too

Yep! Depending on how the ribs are looking you may be able to cut some time on the last hour too.

Yes, on this cook I only used lump charcoal. Most of the time I will add a few lumps of oak wood for some extra smoke.
