How To Turn Off Voice to Text on iPhone
In this video, we’re going to look at how to turn off the dictation microphone, or voice to text feature, on an iPhone.
This can be turned off for all apps like messages, notes apps, and more. Any place that uses the keyboard.
To do this, first open the settings app.
Inside of settings, scroll down and choose general.
Once inside of general, tap keyboard here.
Scroll down to the bottom, and you’ll see the dictation section. To turn off the speech to text feature, just tap the slider on the right of enable dictation to turn it off.
You’ll then get a pop-up message, just letting you know that the same data dictation uses is the same data as Siri when you’re using that. That’s not what we’re concerned about in this video though, so just tap turn off dictation.
Once that’s done, we can then head back into an app that uses the keyboard, and you’ll now see that the microphone for speech to text dictation is gone. So, no more accidentally tapping and recording when you didn’t mean to.
And the same process if you find that you’re missing the microphone but want to turn it on.
Just head back into Settings, choose general, and select keyboard.
Scroll back down to the dictation section and toggle the slider to enable it.
And that’s how you turn off or on the speech to text dictation feature on an iPhone.

Still there. Any other way to remove this 5 bar icon? It's incredibly annoying.

Even better, on my iPhone 13 Pro Max it puts a new icon in place of where the microphone was that requires you to press and hold to record for audio messenger. Was getting tired of coming into work and finding that my iPhone had been recording since the day before.

THIS DOES NOT WORK. My dictation has always been off and even turning it back on and then off again does not solve the problem.
