    Here's a tip. If you cut lemons and limes in half along the length instead of the width you will get more juice and they are easier to squeeze as well.

    Great recipe I used it tonight! If I may give a small critique take the large stems off the cilantro and parsley cause they’re more bitter than the leaves. It’s a little bit of a pain in the butt to get the leaves off but it makes the flavor more pure. Thank you for the video it was great!

    The sherry vinegar really makes this dish. My family had shrimp ceviche at a restaurant that was way too sour, so I wanted to find a recipe to make it the right way. This did it perfectly.

    One of my favorite dishes is ceviche on hot rice. Substituting any decent firm white fish for shrimp works well as well.

    I made this tonight and it turned out fantastic! The only amendment I made is to add about 1/4 teaspoon Tabasco sauce. That tiny bit of heat made it exactly like the ceviche I grew up on in Arizona.

    This recipe is just awesome! I had been making Ceviche for my husband for several years, but sometimes found the acidity to be just a little too much. However, your recipe which adds olive oil and sherry vinegar made all the difference in the world. I could eat this all day long. Thank you!

    Making this now from your recipe. Perfect walkthrough and ingredients. Substituting French Baggett thin sliced bread, put in the oven with lightly dosed olive oil. Crispy and well baked. Substitute for the pita chips. Subscribed and will keep you posted on how it turns out. Truly looking forward to it. Cheers from Florida.

    you should add the salt and lime and lemon juice first and balance out the salt to acid level.. It's the most important step in any south American food

    so it was my understanding that normally ceviche takes multiple hours to marinate in the citrus juice, is that only with fish and shrimp takes less time?

    Ceviche may have originated in Peru, but it was certainly perfected in Mexico.

      Avocados are grown in almost every former and current Spanish colony including Peru, the Phillipines, Canarias, and the Iberian peninsula

    TOO ACIDIC?
    Shouldn't the salad ingredients be dressed separately with preferably a lighter dressing from the prawns? They also get prawn-flavoured as well I guess.
    Personally I prefer different flavour profiles on my plate to keep it interesting and prepare protein toppings separately from the actual salad.

    Use an electric citrus juicer for limes and lemons. The sieve is part of the juicer. Idk what type of juicer he ‘s talking about. I’ve had mine for years

    Pro tip: squeeze limes last over everything and add salt as needed when you put the lime juice in a cup it has a off flavor

    Peru was never founded 2000 years ago before colonial establishment. So it is not Spanish at all, it was simply adapted and spread throughout Latin America and spread.

    I’ve eaten Peruvian ceviche in several authentic Peruvian restaurants. Plus my friend who is Peruvian also makes it. That I’m aware of, they don’t use a sweetener, olive oil or avocado on their ceviche. Avocado is not native to Peru, so that’s not something Peruvians use in their ceviche or cuisine much.

    no no no no no.... you can add a tea spoon of milk maybe to mild out the lime but not those things you put... it becomes too sweet and it's no longer the peruvian experience... which, remember!, it's the best!!!! lol
    Another thing I will share with you my dear new friend ;-)... high end restaurants don't squeez the lime as hard as you did as that will draw out the bitter tastes.... but i think that's bullshit! cause I squeeze the shit out of my limes and the ceviche I make is the best! lol..the other secret ingredient for the ceviche is the ginger.
    Oh lord., I just saw all the veggies you put in it. This is no longer peruvian ceviche, just so all of you out there know. :) in fact, i'm shutting this down. this is sacrileges
