those are some very creative dishes, that tomato dry aged tuna is quite interesting
Atlantic Red Crab has a totally different taste than other crab species. The meat is very sweet. More than Lobster, but still tender. I get them at my local fish market. Last year I made Black Pepper Crab with them and it blew me away. The contrast bwtween the Sweet and the black pepper made it incredible.
We go here semi-regularly. The best thing I've ever had was their soft shelled crab black ink tempura.
It’s nice to listen to someone that thinks the same way as myself. I’m an artist in music and I love cooking. The foundations of cooking come together like a musical composition.

I get it ur not an asian....the taste of live crab is second to none, in SE asia we split it down the middle before cooking, not sure if that kills the crab or not but either way, a dead crab is tasteless in addition to being mushy (like the guy says)

Sushi Taro in Washington DC is one of the best Sushi / Japanese restaurant in the country.
(the restaurants next door to them on 17th st called Komi and Little Serow really good as well! I love those three!

The artistic style is subtle. Many restaurants that put a lot of effort into presentation are too flashy.
I'm curious as to why they choose to go with an awake crab instead of icing them in the freezer beforehand (which doesn't kill them, it puts them in a sleep (torpor) state).
I would think that it was more humane than cutting the legs off something and steaming it while alive and writhing.
Syrkyth I’ve seen crabs literally rip their own claws off for no reason. I don’t think they experience pain in the traditional sense.
