I’m too hesitant to cook a risotto. It’s always on my ‘to do’ list, but I’m always daunted by it. I love mushroom risotto (or chicken & mushroom), just don’t have the confidence to try & cook it. I will one day though!

Chris Klitou Yes! Haha! It’s the pouring of the stock, little by little.. welp! I think i like instead gratification when I cook lol!
Its not that slow a process and its hard to cock up. Just be sure to use stock that is not too rich or the risotto turns out far too rich.

It's technically IMPOSSIBLE to get a risotto from scratch, including preparing and sweating the shallot as well as completing the "mantecatura", ready cooked in just 20 minutes.

I share your scepticism - usually takes me 20 minutes FROM when the rice is starting to cook -- and rice absorbs stock/water at the same rate no matter what you do, I reckon she was closer to the 25-30 minute mark. But such is the wonder and deceit of television production land.
