    Ingredients:
    1½ cups (300g) Risotto rice
    2½ cups (340g) Peas, frozen
    2 tablespoon Olive oil
    3-4 tablespoons Butter, divided
    2 Shallots, finely chopped
    3 Garlic cloves, crushed
    1/2 cup (120ml) White wine
    7-8 cups (16.1.8L) Vegetable stock
    Salt to taste
    Pepper to taste
    2oz (60g) Parmesan cheese
    Directions:
    1. Heat the stock over low heat.
    2. Blanch the peas in a large pot of boiling stock or water for about 2-3 minutes. Transfer a bowl with ice water for 5 minutes. Keep 1/2 cup of the peas for later. To the remaining peas add 1/2 cup of stock and puree the peas in a food processor or with a hand blender. Set the pea paste aside.
    3. In a large pan, heat 2 tablespoons of olive oil and 1 tablespoon of butter. Add the shallots and sauté for 5-6 minutes. Add the garlic and sauté for 1 minute more.
    4. Add the rice and cook, over low heat, until the rice is hot and coated with oil, about 1-2 minutes.
    5. Pour in white wine and simmer over low heat, stirring constantly until the liquid has absorbed and the alcohol has evaporated.
    6. Add 1/2 cup stock to the rice, and stir until the stock is absorbed. Continue adding hot stock, 1/2 cup at a time, stirring continuously. Wait until the stock is almost completely absorbed before adding the next 1/2 cup.
    7. When rice is almost fully cooked, about 15-20 minutes, add pea puree and cook, adding stock as needed until the rice is al dente. Turn the heat off, add parmesan cheese, butter, reserved peas and stir until the cheese is melted. If needed add more stock.
    8. Serve immediately

    I would save the puree until after the butter and right before I add the cheese. I don't want the pea puree to lose its color by cooking too long.

    Ingredientes:
    1½ tazas (300g) de arroz risotto
    2½ tazas (340g) de guisantes, congelados
    2 cucharadas de aceite de oliva
    3-4 cucharadas de mantequilla, dividida
    2 chalotes finamente picados
    3 dientes de ajo machacados
    1/2 taza (120ml) de vino blanco
    7-8 tazas (16.1.8L) de caldo de verduras
    Sal al gusto
    Pimienta al gusto
    2oz (60g) de queso parmesano
    Direcciones:
    1. Calentar el caldo a fuego lento.
    2. Cocinar los guisantes en una olla grande de caldo hirviendo o agua durante unos 2-3 minutos. Transfiera un recipiente con agua helada durante 5 minutos. Guarde 1/2 taza de guisantes para más tarde. A los guisantes restantes agregue 1/2 taza de caldo y haga puré con los guisantes en un procesador de alimentos o con una licuadora de mano. Deje la pasta de guisantes a un lado.
    3. En una sartén grande, caliente 2 cucharadas de aceite de oliva y 1 cucharada de mantequilla. Agregue las chalotas y saltee durante 5-6 minutos. Agregue el ajo y sofría por 1 minuto más.
    4. Agregue el arroz y cocine a fuego lento, hasta que el arroz esté caliente y cubierto de aceite, aproximadamente 1-2 minutos.
    5. Vierta el vino blanco y cocine a fuego lento, revolviendo constantemente hasta que el líquido se haya absorbido y el alcohol se haya evaporado.
    6. Agregue 1/2 taza de caldo al arroz y revuelva hasta que se absorba el caldo. Continúe agregando el caldo caliente, 1/2 taza a la vez, revolviendo continuamente. Espere hasta que el caldo se absorba casi por completo antes de agregar la siguiente 1/2 taza.
    7. Cuando el arroz esté casi completamente cocido, unos 15-20 minutos, agregue el puré de guisantes y cocine, agregando caldo según sea necesario hasta que el arroz esté al dente. Apague el fuego, agregue el queso parmesano, la mantequilla, los guisantes reservados y revuelva hasta que el queso se derrita. Si es necesario, agregue más caldo.
    8. Sirva inmediatamente
