    I never saw a matzo ball made like this and I ran Stage deli in Caesar Place for years and the matzo balls looks spot on and look good I will try to imitate this but wear is the schmaltz aka chicken fat!!

      Exactly, somebody's grandmother is yelling foul tonight. It's not going to have the same authentic flavor profile. The preparation technique is also questionable, with all the manual processing it will be hard to have the same results twice. The egg whites should only be whipped to stiff peaks, kinda looked dried out. The only thing not added was (rofl) bacon. What was the red liquid component, hot sauce? Oy Vey, chutzpah, waste of time...futz!
      Post Script: after cooking the raw Matzo ball it appear that they were placed into a second bucket, which, appeared to be schmaltz bath? Sorry about the edit, I had to view it twice.

      Their whole process is a mess … They are going to have unbelievably inconsistent cooking times with him hand forming like that, and not segregating them by time while they are cooking

      @@afonsoneto1407 Because those vegetables are used to flavor the broth, and after you simmer them for hours they have no flavor and not much nutritional value except for fiber. They're just mush.

    According to my colleague: Jhon C. At 8:20, the Cook throws the ingredients in the Trash, because these vegetables are used to flavor the broth, and after being boiled for hours they have no flavor and not much nutritional value, except by fiber. They are just porridge. \O/ . Excellent answer John C

    Never seen matzoh balls made that way. I guess it's to insure fluffiness and shorten cook time. Traditionally you would let the mix rest in the fridge for 15 to 20 minutes before forming and cooking sure they are good though 😋

    One issue that I have would be that the worker who took out the vegetables from the stock had his scoop touch the trash bag and then used the mesh scoop again and again to scoop out more from the stock. Maybe the trash bag is clean, but who knows for sure?

      the rubbish would've been clean & double wrapped! sometimes u can use a large pot as well and put a rubbish bag over it! we do it at our restaurant to get rid of soup stock bones that need to be disposed of!

      This is a non issue. The bags where obviously set up right away to dispose of veggies. Even if the bags where “dirty” it’s boiling water anything bad will cook off

      I thought so too, but once the broth is made, they are mushy and have given up all their flavor. There's really nothing else you can do with them at this point.

    I'd rather eat all the celery, carrots, onions, and what ever else they threw away from the pot. What a waste!!!! 1 ball, small amount of pasta and some juice. ENJOY!! Wasted more than they served.

    What a WASTE of all those vegetables and chicken just to have a clear broth. Seems to me they should be used to make something else.... a vegetable chicken soup with DUMPLINGS? I have learned to love matzo balls in that broth but now that I see the waste, I'm appalled.

    dude could save himself some time working on the eggs either by slowing the speed on the machine and adding the yolks to the whites little by little, or just by whipping the eggs whole - just put 'em in the bowl, put it on med high and forget about them for like 20 mins...

      Matzoh stock is cooked for hours and hours. The mushy bland vegetables aren't traditionally served since there purpose was to give body to the stock. Who wants to eat mushy overcooked celery, carrots and a whole onion

    What the literal F happened to those poor beautiful vegetables? In the trash on the floor? This whole thing seemed pretty unsanitary to me. Plus not having matzo ball soup with the veggies seems unheard of to me. You have to have celery and carrot at the very least. Oh well.

      I think it depends on the scale of the balls itself. Sometimes I’ll make it and make smaller balls so everyone has a fair few and other times I’ll make a singular big one, it’s a matter of personal preference.

    While the ingredients and the culinary technique in processing the Matzoh Ball soup does look good.
    Time and studies has shown that the use of Aluminum Pots, Pans, Containers-Vessels for food preparation is Not healthy, not good.
    Stainless Steel, Cast Iron,Cooper, pots, pans, containers-vessels are the healthiest to use for food preparation.

      You missed my entire point.
      Instensive observed sciencetific method testing has proven that when a certain temperature threshold is reached Aluminum Cookwares exude part of it's composition into the said foods.
      The results of the various testing on Aluminum Cookwares discovered, found that over time such has an extreamly negative effect on people who consume the said foods with Nerve-Brain absorbition causing damadge; Alzheimers etc.

      Bare Aluminum surface cookware has been tested and proven to release dangerous substances into foods once a certsin threshold temperature has been achieved.
      Many including myself avoid as much as possible using Aluminum Cookware/ Foil wrap etc.

    wouldn't it be easier to mix the egg whites then take them out, mix the yolk in the mixer and then add the egg whites back in. Eliminate the need for hand mixing.

      The machine would over work the batter. You need to hand mix it to keep them fluffy

      No se sirven porque so hervidos todo el Dia. No es un sancocho o caldo traditional done se espera que se hierva el Pollo hasta que le ponen la verduras. El caldo de la matzoh se hace de puro hueso y la verduras son no mas para que suelten su hecencia y aroma.

    I need to try that technique the next time I make them. Mine come out kind of soft but a bit too dense. I would love to know what the recipe is because that soup looks so tasty and we don't live in the metro area any more. We are in a Boston suburb now.

      I just tried your method of separating and whipping up the egg whites and that made such a nice difference in the texture of the matzoh balls. They were so fluffy. Thank you so much for teaching me a better way to do them.
