- Passover is right around the corner! Join Molly Baz and Adam Rapoport in the Bon Appétit Test Kitchen as they make BA's best matzo ball soup. This soup is very schmaltzy, full-bodied, and flavorful. If you prefer a leaner, clearer broth, make the soup a day ahead, chill overnight, then skim the schmaltz from the surface of the soup before reheating. You can save the schmaltz to make the matzo balls or for another use. This recipe serves eight people generously (with two balls each) but could easily stretch to serve 16 smaller appetizer-sized portions. We ordered the steps so that you could make the stock and matzo balls simultaneously, but if you prefer to break up the work, you can make both the balls and stock a couple of days ahead.

Umberto seems like a reasonable point, but considering the focus on personality-driven videos that is so consistently dependent on the already present chemistry between the chefs in the test kitchen, it’s not unfair to expect that kind of chemistry in all the videos they post.
They clashed a lot in previous videos they did. Highly recommend you watch them. Quality entertainment

I’m really not seeing it. A few minutes in and it’s already pushy and uncomfortable. Continuing to watch and his presence isn’t really adding anything. Just asking random questions like you do when you don’t know what else to say. Not to mention molly is noticeably uncomfortable multiple times.

It's so clear to me that Adam has seen or heard of the critiques in the comments about how he interacts with Molly because I found him muuuch more delightful in this than I have in the past.
Love that Adam is like an adorable little chef helping his mom in the kitchen, and said mom (Molly) is trying to avoid frustration while correcting him every few seconds. The dynamic is amazing, and bless Molly’s strained soul, I want it more often.

Scott R there isn’t a very high Jewish population in Australia. I know two Jewish people, one of them is my grandma and the other is my dad, (technically) who is an atheist. We have mostly SE Asian, Lebanese and Greek culture, Scottish and English as well as obvs indigenous culture which isn’t recognised nearly as much as it should be.

LOL, there are not many Jewish people **in the entire world** - less than 1% - yet their widespread cultural influence far exceeds their low numbers. Australia has about the average number for a UK country, about .4%. It's hard for me to believe that any reasonably aware Westerner has never heard of Matzoh Ball Soup, it's commonly referenced in TV, movies and books, but the amount of ignorance in the world always surprises me. What's even funnier to me is to try to imagine what a 'Mozzarella Ball Soup' would be like, ew, lol.
Kudos to Adam for taking the criticism of his manner to heart. I've honestly noticed everyone being so much more comfortable around him the last few months, and there's nothing to cringe at in this video.

I really enjoyed how Adam asked the questions, I would have while trying to make this. All the chefs on BA have great personality, but sometimes they skip over stuff because they are already understand how to cook. I know they film these months in advance, but I’d love to see more of this with Adam. I’d also love if Adam showed more of his true self. I fully believe he can let his personality shine, while adding in simple questions. Great video.

As a Jew who makes this regularly, you absolutely can cook matzah balls in the broth. It makes for a much more flavorful ball (salt your broth before adding them), and it doesn't hurt the broth in any way, as long as you don't have a heavy ball to broth ratio. Also, you can add the dill at any point during the broth simmering. If you put the dill in at the beginning, the broth becomes infused with that dill flavor and the aroma still comes through. If you want the best of both, add a little in the beginning and then the rest later on.
To clarify, there's nothing wrong with the way it was done in this video, but I am just adding my own experience to the conversation.
