The chicken came out fine, but the bricks were still raw on the inside! I put it back in and by the time the bricks were well done, the chicken was burnt to a crisp. :/
Well done sir. Well done.
"IT'S RAAAAAAWWWW!!"
You should try doing brick under a chicken next time. Completely diferent recipe for a brick both juicy and... relatively tender!
Now that is funny!!!!!! You just made my 'Top 25 List'.
+Legit Name you quoting Ramsay
Watching this vid, it's one hour old,
chicken so fresh it's not even cold.
Chef John is the man, I do not lie,
you can see why we all love this guy!
Wit and banter so clever and true,
sweet, savory, good technique too.
Easy to learn, and tasty, oh boy,
sit back and relax and as always...enjoy!
You, my friend, are the Hallmark moment of...something that rhymes with 'moment'. (I leave this up to you, since you are better than this than I am, obviously)
My friend you are the Clive Owen of that food wishes poem!
OMG IM OBSESSED WITH HIS
Great Poem.
chef john, you seeing this?
Can I substitute the chicken for more bricks?
"Your skin should sound like this"
If my skin sounded like this, I suspect I'd have a serious medical problem.
Haha, I thought exactly the same thing while watching this! :)
Hahahahaha!!
CologneCarter yeah but I'm sure I would be delicious
you would have a severe case of DELICIOUS!
It's 1:31 AM.. And now I am craving this chicken!
Chef John you are DEFINITELY my favorite teacher. Thank you.
G'day Chef John, I've been doing this for years (the concept also works a similar magic with pan roasted meats) and even works with turkey. No matter about not cooking those wings. I save up my wings and spines in the freezer until I've got enough to do a batch of chicken stock. Thanks again. Cheers, BH
Congrats on 1 million subs!!!!!!!, I've been watching your vids for a few years now and they never disappoint. Good luck and I wish you the best.
Just made it. The taste of it made my day. Thank you Chef John!!!
Chef John, congrats on your million + subscribers! Well deserved!
My version turned out very well. I ended up using a second cast iron skillet covered with foil though because I didn’t have any bricks. The only thing I did differently was that to season the bird, I made a seasoned butter rub that I put under the skin as well as a little bit on the top. I used about 2 tablespoons of softened unsalted butter mixed with a little bit of the following: pepper, Italian seasoning, sage, garlic powder, onion powder, and soy sauce (yes soy sauce. Believe it or not it was great in this) It came out so great. I also did not put the chicken under a broiler at the end. I just let it bake normally for an additional 6 minutes. The only issue I had was that in trying to flip it back over, the leg quarters came off (but still in the pan) so I had to put it back in place. I made the “broken spaghetti ‘risotto’ “ with this dish and it was amazing! Thanks chef John!!!
Awesome recipe!
You really should do a video on proper cast iron maintenance and seasoning. I think that would be awesome.
Agreed! That would be awesome.
Chef John has already covered this subject here foodwishes.blogspot.com/2015/01/reclaiming-your-cast-iron.html .
passionfruitfruit Oh cool, thanks!
Thanks! That was very useful!
Aside from the quick and easy recipe's, I really enjoy your narration Chef John! Thanks a lot!
Chef John, I've made spatchcocked chicken before. But tonight I used a couple of your techniques and simple seasoning, and omg, I wish I could include a picture. Thank you, it was delicious.
Dear Chef John, I've enjoyed your witty humour and pleasant presentations. Thanks for your work. I appreciate your recipes so much!
oh no! I dont have a chicken or bricks! All I have is a turkey and a cinderblock.... actually....hmmm..
So simple yet turned out phenomenally decadent! I made this last week. It's a keeper. Thanks Chef John!
Why didn't you call this brick on chick... come on
The chicken is here the star of the show, not the bricks , so therefore we describe the position of the chicken ;)

... because when people tell their *moms/ aunts/ girlfriends/ female teachers* that _"hey! _*_Google_*_ this great video called _*_brick on chick"_* ----- they will end up with a *_very different video_* that will *scar* them for life.
***** That reminds me of the time.....nevermind.
Just made this, turned out fantastic thanks for the recipe!
Oh Chef John...This line about Robin Thicke was hilarious, I love you.
Chef John, this looks amazing, I can't wait to try this technique.
Spatchcock, haha. Look how beautiful this chicken turned out. Freshly ground black pepper.. I love Chef John's softly spoken instructions!! I need to try some more of these recipes. Thanks for sharing.
Cracking little recipe!
You're hot ;)
lol
this turned out beautifully.. thanks!
Love the technique! Thanks for posting! :)
Brick Chicken Rocks! Nice job!
Chef John, I have seen you make separate recipe videos to specifically illustrate how to make one more intricate component of a dish.
Have you ever considered making a video on how to prepare some basic item the best way possible, and then follow with some 3-4 recipes using those leftovers?
For example: how to make a great ham...and then follow next week on how to make the best Cuban sandwich. After that, how to ham salad sandwich, etc.
CJ, you are #2 in my book. Mario Batali is #1..and Laura Vitale is #694.
Btw, my niece that makes mud pies I rank at #623
Why don't you like Laura Vitale?
Liv
Laura's talented and has good recipes, but her voice makes me want to cut my ears off.
Laura is annoying as all hell but I just wanted to know why he didn't like her :) she actually is a really sucky cook, I have NO idea why she is as well known as she is. It really pisses me off honestly.
starchild34
Laura is not talented. She has some charisma, and she is very attractive. Her recipes are sometimes suspect, and her techniques are ALWAYS criminal. She gets away with her looks and charm, which is unfortunate because she teaches soooo many bad kitchen techniques that people knowing no better will employ.
And ... finally ... Chef John, you really laid your game down flat with this one.
Not even 30 seconds and there is so much pun and I love it. Keep up the good work.
I wonder if I'm the only vegetarian who watches every foodwishes video, even if it's entirely about meat, just because I can't get enough Chef John...
Thank you for not leaving hate! I'm pretty sure Chef john has a few vegetarian videos, you should check them out!
I don't eat sugar but I still watch his dessert videos- he's so great I would probably watch no matter what he was making :)
Me too.....😊😊😊
Well i m not a vegetarian but irrespective of the recipe i watch his videos coz he is sooo pleasantly hilarious that its worth it...😀😀😀😀
Stop it.. you guys are going to make Chef John tear up. It won't be pretty.
Right there with ya
Chef John! i was wondering if i could request a recipe for fried pickles?? pickles are my favorite food and i have never had fried pickles before!! or some other ideas i would love to see your take on is salmon dip, or steamer clams. i have many suggestions in mind so hopefully it sparks some ideas for you :) Much love from your most northern viewer in Deadhorse, Alaska!!!
His puns.... pure gold....
You're the best.
Thank you!
Bravo! Wonderful video recipe that made me both hungry and eager to try it. Well done. I love your recipes and your videos.
I used to work at an Italian restaurant and they called this dish Poletto al matone , or , chicken under a brick ! I always pictured Carla from Cheers smashing the bird with a brick and I still giggle when I think of this dish !
lol he uses hipster bricks
anky bh they were from the mainstream
Ik you’re comment is three years old but I can’t resist. You could say he doesn’t use Home Depot bricks because they’re too mainstreet his bricks are artesian alleyway bricks. Hahaha sorry I’ll leave now

I love your channel. It's amazing.
Chef John. Just made your Polish Hunters Stew. You did it again. Absolutely delicious.👍
Looks great chef John! I love chicken! :) TFS!
Looks delicious! Reminds me of chicken tabaka as well, which is also a "pressed" chicken recipe
just made this for dinner! delicious. didn't have bricks to weigh it down so i just put a smaller frying pan on top and weighed it down with those dumbbell weight rings. just stacked it on top. came out looking like yours and tasting delicious! but that backbone was not easy to remove!
super recipe as always , thank you
Love this guy!!!
Chef John, stepping up his joke game. I love it. (Also this chicken looks amazing)
Wow, never seen this one before. Great video.
You're the best. Also this looks delicious
Great food ... great comedy ... some good practical advice on what to buy and how to use it ... and of course some valuable life lessons what's not to like?!
Looks fantastic. So moist and tender. I will have to give this a try. I want to request a video. I don't think you've ever done a canolli recipe. I'd love to see your take on them. I've just recently been really into them and want to try to make my own.
Whoa...incredible!!!!
Yum!! Must try this.

Chef John you're on a roll this time
Crunchiness filter 🤗. Amazing technique, I saw it once used in Thailand kitchen
Excellent!
Thanks for this video, I'm making this on the grill tonight!
You sir are the king of crispy.
I'm in the 12" cast iron pan club! Got one for my birthday last year. I will definitely try this as long as i can find some clay bricks.
yes love it more please
I may or may not have drooled watching this...
I always watch food videos while eating something, so I wont go crazy craving. Right now Im actually having chicken LOL
I do this WITHOUT the brick and it turns out really well too. The main contributor to crisping the skin so nicely is the frying it skin side down part, and the pan being hot before you put it in the hot oven. Now the pan doesn't have to heat up so the skin continues the frying process and renders the fat so well and that skin, god damn it's good. The salting and patting with water, the turning it on broil at the end, and all this other stuff helps too I'm sure but they're not the main thing going on here. The brick prob helps the chicken stay flat all around the edges though, plus it's cool that you can say hey!! I'm cooking with a brick!!!
this explains why there's wall chicken in castlevania...
Enjoy watching your videos! Could you make something for the Lunar New Year??
Your broiler chicken technique is still one of my favourites
Happy Lunar New Year~~~
your oven is slaying my soul, no pun intended
Greetings from Denmark :) Looks so delish!!! Thank you for the recipe/video. But what did you do with the backbone? I hope that you did not through it away! That is my favorite piece of the chicken - I love the crispy skin and just nibbeling on it. I will try to make the chicken tonight and I will keep the wings on the bird and try to wedge the backbone under the bricks aswell :)
Backbone and tail. Baked crispy. All that skin, yum!
Can you use a Cast Iron Skillet on a glass top electric stove? Just moved south to where we don't have natural gas and heard that we shouldn't do that? Love cooking with my Cast Iron skillet. Thanks, and love this recipe.
Interesting! I haven't seen this method before.
LOVE your channel
amazing
The chicken looks heavenly! But must you prod the chicken with the piece on your fork so much?
The wings and the back, keep for stock! Seems to me the at I seen this before I think AB did it on good eats! As for the 12 cast iron skillet, you got that right, I have an 8 and 10 inch too!
Subscribing to this channel is the smartest thing I've ever done on CZcams.
I love chicken and just bought the new pan! will give a try if I can have the bricks.
Your pun game is on point, Chef.
Question. My oven does not have a broiler btu a seperate grill. Would it work putting it under the grill for 5 minutes or does ithave to be a broiler? I also have a blowtorch (culinary not an arc-welder) would that work as well?
When you watch this before you go to bed, feels so great T_T
I'v eaten this before. And for some reason i can confirm that the chicken meat becomes so juicy and tender, it's the best way to cook it.
I like this channel
I need a cast iron skillet guide. I've read so many different things on how to take care and maintain a cast iron skillet. I don't know who to believe so i'd rather just blindly follow you Chef John!
Hey Chef use this technique on the BBQ was gooood.Merci
How long did you sear this for, or was it pretty immediately placed in the oven?
How about using another cast iron pan instead of bricks?
Anything heavy works
Food Wishes What about my obese uncle, Aladdin? Or my antique collection of heavy yet flammable relics of history?
***** Welp you are the Robin Thicke of your chicken under brick
+Lu Ting gonna use some truck wheels
undo.kat cats are too light u can press your foot against it instead if u cant find any bricks
