    The chicken came out fine, but the bricks were still raw on the inside! I put it back in and by the time the bricks were well done, the chicken was burnt to a crisp. :/

      You should try doing brick under a chicken next time. Completely diferent recipe for a brick both juicy and... relatively tender!

    G'day Chef John, I've been doing this for years (the concept also works a similar magic with pan roasted meats) and even works with turkey. No matter about not cooking those wings. I save up my wings and spines in the freezer until I've got enough to do a batch of chicken stock. Thanks again. Cheers, BH

    My version turned out very well. I ended up using a second cast iron skillet covered with foil though because I didn’t have any bricks. The only thing I did differently was that to season the bird, I made a seasoned butter rub that I put under the skin as well as a little bit on the top. I used about 2 tablespoons of softened unsalted butter mixed with a little bit of the following: pepper, Italian seasoning, sage, garlic powder, onion powder, and soy sauce (yes soy sauce. Believe it or not it was great in this) It came out so great. I also did not put the chicken under a broiler at the end. I just let it bake normally for an additional 6 minutes. The only issue I had was that in trying to flip it back over, the leg quarters came off (but still in the pan) so I had to put it back in place. I made the “broken spaghetti ‘risotto’ “ with this dish and it was amazing! Thanks chef John!!!

    Chef John, I have seen you make separate recipe videos to specifically illustrate how to make one more intricate component of a dish.
    Have you ever considered making a video on how to prepare some basic item the best way possible, and then follow with some 3-4 recipes using those leftovers?
    For example: how to make a great ham...and then follow next week on how to make the best Cuban sandwich. After that, how to ham salad sandwich, etc.

      Laura is not talented. She has some charisma, and she is very attractive. Her recipes are sometimes suspect, and her techniques are ALWAYS criminal. She gets away with her looks and charm, which is unfortunate because she teaches soooo many bad kitchen techniques that people knowing no better will employ.

    Chef John! i was wondering if i could request a recipe for fried pickles?? pickles are my favorite food and i have never had fried pickles before!! or some other ideas i would love to see your take on is salmon dip, or steamer clams. i have many suggestions in mind so hopefully it sparks some ideas for you :) Much love from your most northern viewer in Deadhorse, Alaska!!!

    I used to work at an Italian restaurant and they called this dish Poletto al matone , or , chicken under a brick ! I always pictured Carla from Cheers smashing the bird with a brick and I still giggle when I think of this dish !

    just made this for dinner! delicious. didn't have bricks to weigh it down so i just put a smaller frying pan on top and weighed it down with those dumbbell weight rings. just stacked it on top. came out looking like yours and tasting delicious! but that backbone was not easy to remove!

    I do this WITHOUT the brick and it turns out really well too. The main contributor to crisping the skin so nicely is the frying it skin side down part, and the pan being hot before you put it in the hot oven. Now the pan doesn't have to heat up so the skin continues the frying process and renders the fat so well and that skin, god damn it's good. The salting and patting with water, the turning it on broil at the end, and all this other stuff helps too I'm sure but they're not the main thing going on here. The brick prob helps the chicken stay flat all around the edges though, plus it's cool that you can say hey!! I'm cooking with a brick!!!

    Greetings from Denmark :) Looks so delish!!! Thank you for the recipe/video. But what did you do with the backbone? I hope that you did not through it away! That is my favorite piece of the chicken - I love the crispy skin and just nibbeling on it. I will try to make the chicken tonight and I will keep the wings on the bird and try to wedge the backbone under the bricks aswell :)

    Can you use a Cast Iron Skillet on a glass top electric stove? Just moved south to where we don't have natural gas and heard that we shouldn't do that? Love cooking with my Cast Iron skillet. Thanks, and love this recipe.

    Question. My oven does not have a broiler btu a seperate grill. Would it work putting it under the grill for 5 minutes or does ithave to be a broiler? I also have a blowtorch (culinary not an arc-welder) would that work as well?

    I'v eaten this before. And for some reason i can confirm that the chicken meat becomes so juicy and tender, it's the best way to cook it.
