I made this bread using my bread machine dough cycle for cooking class & it was awesome. Everyone loved it. I've been asked to make it again for fellowship lunch this Sabbath. PS. I used a whole can of coconut milk + 1/4 Cup of coconut water. Thx the recipe.

Just discovered you on youtube a few minutes ago. Watched first black cake followed by sugar cakes. Wonderful to have you on here doing these wonderful Caribbean recipes. As for the coconut thing,well i heard it immediately watching both videos and now this one as well. Fine that someone else cared enough to tell you,if not,i would have. Better to be corrected than to keep saying it incorrectly. You do a wonderful job here with these recipes. Keep it up.

However, I need clarification I don’t have access to fresh coconut so when I buy it in the stores am I buying unsweetened coconut or am I buying sweetened coconut for this recipe ? Can I knead the dough in a Stan mixer? I will send you the pictures on Instagram.

Did you forget to add the quick rise yeast? It's still quite dense even with the yeast. Make sure you use the yeast and give the dough about half an hour to rise before you pop it in the oven. One time I was making bread and it didn't really rise and was insanely dense and almost raw in the middle. It was only afterward that I realized I had made the mistake of using our blending flour, not the all purpose flour, and that was more than likely what caused the problem. Lol.

I do half vegetable shortening and half butter you need a little nutmeg and a baking powder
How would you alter the recipe if you just wanted to make regular roast bake?
just dont put any coconut in it

U can use either one. In this recipe I used unsweetened as that's the traditional way.

I made this bread and it had it has a very bland taste to it. My house smelled delicious but the taste of the bread was blah. Is it supposed to taste like that?
It's better to use the unbleached flour
it's usually not to sweet not too fresh..kind of like a fresh pound cake...but, sweetness depends on u n ur taste buds....but it's a "comfortable" kinda sweet NOT a "snicker-bar-tooth-decay" type of sweet :-)

the shortening gives the crust more crunch, so the more you use, the harder the crust gets, compared to butter. (use unsalted butter, not margarine.)
I'm sure it's been said before BUT I LOVE this bake to dunk into buljol...oh boy!!!

I followed the exact ingredients and my bake did not rise. I think the next time I would use baking powder like others have included
did you proof the yeast in warm water before adding?
LaDonna Louise it depends on a lot of things. Did you use the original yeast where you have to dissolve it in warm water? was the water too hot?
