How to Make Frog Eye Salad

  • Frog Eye Salad is a potluck classic and a family favorite around here. This weird-sounding but delicious dessert salad is made with acini de pepe pasta, pineapple, mandarin oranges, coconut, and marshmallows!

    Salad
    1 cup uncooked acini de pepe pasta
    20 ounces pineapple tidbits, reserve juice
    10 ounces crushed pineapple, reserve juice
    15 ounces mandarin oranges, drained
    1 cup shredded sweetened coconut
    1 cup mini marshmallows
    1 cup heavy whipping cream
    ¼ cup powdered sugar
    Sauce
    1 cup reserved pineapple juice
    ½ cup granulated sugar
    1 egg beaten
    ¼ teaspoon salt
    1 Tablespoon cornstarch

    Great video and recipe, thank you! I am making this for upcoming family gathering! I love how you let the sauce and pasta marry for a while and then made it, that has to make a big difference in flavor!

    This is mostly how my granny made it! Now that I'm pregnant, I'm craving things that taste like, "home." I'm making it this year for that nostalgia and because i just miss her so much 🥹

    coconut... insanity. Marshmallows are a weird add, but I could see it, I guess.
    Acini de Pepe Salad (as I knew it growing up. I only recently learned of the name frog-eye salad) is certainly much better without such additions, but I will say that banana slices go great in the mix.

    Does the sauce need sugar? Your written recipe calls for sugar but doesn’t say how much.

      It could be since it's definitely sweet enough, but we have always served it as a side dish, similar to a Jell-o salad.

    What's mean to frog 🐸 eye can you eat frog 🐸 eye 👀 so cheap if you are Muslim that you know that if you are not so it's easy to eat for you😱

      The pasta shape, after cooking will give the appearance of frog eyes, and that is where the name comes from. Unusual name, I agree, but it is intended as a funny name only! Hope this helped!😉
