One of the preferred methods is to right click on the ship and check firing arc in the drop down, instead of going to your dial and opening up its interface.

Any tips for making a turret arc stay attached to a ship?

In the latest update you can use one of the turrets arcs that are set aside and they should attach correctly when placed on ship.
