Homemade salami with cheese

He succeeded!
It's not perfect, but it's here. here is the wonderful salami with cheese from my once beloved butcher shop near school :-D
It was like a Junior with cheese and it was wonderful ♥. The butchery has long been abolished, and the only salami that is similar is produced in Slovakia, and you really wouldn't want to see the composition, it was basically just a flash around the meat :-(
Similar ones are sold, there is a good one in COOP for example, but it is not "mine".
So I went through the procedures, recipes, composition of similar products and put together the recipe and the procedure.
I am satisfied, but I will still fine tune it, that is, if you are interested in this kind of videos - in home conditions.

pork leg
Beef front
raw lard
Praganda - (quick salt), possibly a combination with ordinary. salt, nutmeg, garlic, onion
gouda
