I would like to have seen bunkai for every movement. Seeing techniques to the air doesn't tell you much about the information in the kata.

True, but sufficient practice and contemplation reveal much more.
Try unraveling the applications from the mystery that is Pa Kua Chang, or just Tai Chi Ch'uan. Different, yet the same rule applies, practice and contemplation.
