Hey there! Is there anyway that I could make a version like this (locally) where I tell it to parse a bunch of PDF documents that I can then chat with?

Yes, you can build an app to talk to your PDFs locally. To do this, you can use LangChain or LlamaIndex, Ollama and Streamlit. To work with PDFs, check this doc:
