I absolutely hate how these commentators don't say the Asians' names in the correct order.

Anyone can help me understand how to judge the score when there's mutual touch? It seems a question of century for me...

The first one to attack has the point
If there is a parade riposte, the parade riposte has the priority on the « remise d’attaque »

Whoever has "priority" gets the point. Meaning the attacker (the one going forwards) if they don't interact beforehand. Or whoever responded to the most recent failed attack, whether that be because the opponent failed to connect with the weapon or was parried. Here are some examples for better understanding.
Example 1: Fencer A is going forwards, fencer B is going backwards. Fencer A lunges and hits at the same time fencer B sticks their weapon out and hits them. In this scenario because fencer A is on the offense they have priority and get the point.
This can be seen at 2:05:37 where Lei pushes Aboeulkassem backwards and scores a hit at the same time Abouelkassem sticks his weapon out. They both hit but Lei gets the point.
Example 2: Fencer A is going forwards, fencer B is going backwards. Fencer A lunges and misses. In reaction fencer B sticks out their weapon and hits at the same time fencer A twists their weapon in to hit their opponent in a new action. In this scenario fencer B gets the point because fencer A missed their initial attack and gave priority to fencer B, and fencer B scored a hit on their first action with priority.
Example 3: Fencer A is going forwards, fencer B is going backwards. Fencer A lunges, fencer B parries their weapon diverting the blade away making it miss. Fencer B then attempts to riposte (hit after failed attack) and misses, fencer A then twists their weapon in to hit their opponent at the same time fencer B does the same. In this example priority is passed twice, it is first held by the attacker fencer A, on the parry it is passed to fencer B who then misses passing it back to fencer A when the hit is made. In this example fencer A scores the touch.
You can see a similar example at 1:54:16 Choi initiates, but is parried, Baldini misses his riposte, Choi misses his remise (a second attack after a failed one) and Baldini hits his remise. Choi had priority, which was given to Baldini, given back to Choi and finally back to Baldini who hits around the same time as Choi. Baldini scores the point.

Anyone else notice that Choi and Baldini are on the wrong sides of the strip? Baldini is a lefty so he should be on the left side from the ref's perspective

No, he schould not. This is an old rule. (Okay this fight is from 2012, I don't know how the rule was then)
The Ref could say, that he have to be at the left side, but he don't have to.
