I like their use of fat trimmings. Beef and pork fats are great for flavor and for oiling the griddle at the same time.

Surprised how empty it was, I guess there was a reason it closed. Interesting that he used no oil, no excess fat of any kind beyond the little that came from the meat. Sad that such a place is gone.

One "well done" ... how to ruin a good steak! 😢
Some people actually like it that way... my wife thinks a steak is not done until it's gray all the way through, while I prefer mine medium to medium rare. Usually I'll order medium, and am satisfied with anything between medium rare and medium well. It's really hard to cook a steak well done while keeping it juicy.

Чел, то, что ютуб перевёл тебе название видео программой-переводчиком не значит, что его автор написал спецом против русских. В описании к этому видео я лично ничего особенного не вижу, но, судя по англоязычным комментам, этот ресторан тупо закрывается насовсем и именно поэтому "мы" в нём никогда не сможем побывать. Ну и насчёт пельмешек тоже заблуждение - варёное мясо в тесте есть и в японской кухне.
