Just a little info: when Her majesty the queen and the late Duke visited Serbia(Yugoslavia at that time, Tito was their host), they were served Leskovacki roštilj. A special crew traveled to Belgrade along with the spices and secret ingredients. The late Duke was quite satisfied. He praised the crew, commenting about excellent paring of beer and bbq. Chears!!! Enjoy the stay!!! Thank you for being kind.

I'm moving to Serbia from Dallas Tx next month! Can't wait! I really want to go check out that grilled meat festival! I lived a few years in Munich during 83-87 and Yugoslavian food was the best restaurants in Germany. I was really disappoited returning in 2011 and there were no more Balkan style restaurants there. Maybe by now they have returned but I'm going to the source this time!

Something I really loved in Germany at these restaurants is that they also served amazing Spatzle with the Yugoslavian meat dishes. That is much better that fries, it really soaked up all the juices in the meat and there was usually a meat gravy too covering the Spatzle. Do any restaurants there serve Spatzle or something like it? Maybe rice could be a substitute.

Yes, yes yes, the swedish guy has the point. One can HARDLY compare ANY minced meat dish with roasted piglet or lamb, done in balkan way! One first dig a small "grave" in soil and fills it with coal or is it wood, I forgot it, but anyway then burns it and wait till it gives a long lasting but rather mild heat. One then puts the whole pig or lamb horisontaly, spiked, which rests on rather short 2 vertical spikes, so that it's approx. halv meter above the heat. Then slowly, a couple of HOURS and with rotation and "painted" by salty water now and then, it roasts.
You have to try it, it's unbeatable.

The answer is all but simple.
The topic is very controversial, and I may get corrected or verbally abused for trying to explain it.
      In broad strokes:
Before their crisis, these were structured and operating by a native Yugoslav economic model called Social Self-management, unique in the world. It was a socialist planned economy governed by the Communist Party of Yugoslavia, with institution of Social ownership, besides the State ownership. That was the SFRY economic system, while the political system was called Self-governing socialism. Social ownership was a non-marketable shared ownership by the employees, with the democratic principles of decision-making within the workers' councils of each enterprise, where any share-holder had vote, proportional in strength to their hold of shares.
It is hard for a layman like myself to understand this, even less to explain it in theory, and impossible to explain of how did it actually work in practice.
During the cold war, Yugoslavia was one of the leaders of the Non-aligned movement, which was taking a large chunk of the counties which were nor members nor aligned both with NATO's or the Warsaw Pact's policies. This was the primary Yugoslav export market, though it exported to the NATO and Warsaw Pact countries as well.
With the decline of the Warsaw Pact, SFRY and it's non-aligned market started loosing it's potential, USA started pressuring SFRY for the priorly taken loans, so these factories' produce, started loosing market value, while the country was still keeping the factories running for the social reasons, employing millions around SFRY. With the lose of the geopolitical weight, SFRY was also loosing access to the top production technologies.
In the late 80's it started to affect the large population, social unrests ensued along the ethnic lines, in the early '90s the civil war started. Though Leskovac was safely outside the war zones, the UN sanctions and embargoes and the economical collapse of the country due to one of the largest inflations ever recorded, the factories stopped working.
Much of what was still valuable and feasible for restructuralization, was bombed in the NATO aggression in '99, as a mean of pressure towards the social dissatisfaction, encouraged to overthrow the ruling regime.
After the fall of socialism in early 2000s, capitalist transition started. The formerly socially owned enterprises were nationalized to be sold for petty penny to the private companies. Many of them were not even considered to be restructuralized, the goal was to reduce the value as quickly as possible in order for them to be purchased without any delay.
Most of them were purchased for the incorporated land ownership, or for some money laundering schemes, and almost none started working again.

Making Rakija is a Serbian tradition and in small towns or villages that tradition is still very much alive (like vine making in France).

A part of the herbs the secret ingredient should be Bread(that why you have to put cheese to keep it moist)and egg most likely . The ground meat could be 60% pork 40% beef unless is specified Beef Pljeskavica. I myself like to use Panko, cheese, egg, herbs and mixed beef and pork.
One more thing can get you texture like that - put 1/2 tea spoon of bread soda in your regular burger mixture, mix well let it sit for 1 hour than cook.

12:28 The best Rakija is in it motherland, Valjevo, western Serbia. But Leskovac makes also HQ rakija. My recomendation is to visit Vlasinsko jezero(Vlasina lake), is not faraway from Leskovac.
If u have time, maybe Vranje, small city southern from Leskovac. They are famous by gypsy trumpet music and poets.

I have something you probably know by now. All people from abroad are impressed by our 'slow' tempo of living in Belgrade, and its 'low' prices. Now you know that in other towns and places life is EVEN MORE cheaper (prices) and it is even more SLOWER. I am from a town 50 km away from Belgrade and the pace in my town is not as hectic as it is in Belgrade and our prices are cheaper. When I come from Belgrade to my town, I can feel more peace, people are not so restless as they are in Belgrade. I can imagine how fast is life in your countries (from the West), if you consider Belgrade as slow.

@Dragan L are you sure? Have you seen how people were chasing 3000 dinars voucher in the shopping mall few days ago as if it was Black Friday? What does that say about the country and society? How can people pay bills and live with 3000 RSD they get? Have you thought about the quality of the life in Serbia instead of quantity only? Have you met retired people whose retirements are 10k RSD monthly? Have you met people who work for 25-30k RSD monthly for Serbian bosses where they don’t have any rights at all or maybe you are one of those bosses, so it’s all good for you? How do you explain thousands of young and educated people leaving Serbia every year? What about state institutions that are not functioning so the simple people have to do certain things by themselves or to “write to president”? Unfortunately I see both causes and consequences. Serbia is definitely no winner and that is the saddest part, so don’t show the false image to foreigners.

Nice video. I would recomend go to Terme Mlava in Zdrelo, you have to book a room at the spa (Terme) they have the best Pastrmka and it's right out of the crystal river that come out of the mountain a few miles up the streem it's amazing and they will give you some amazing local Rakija. I have been there 20+ times it's only open with a room (30 rooms I think) so few people. You have to take the bus to Petrovac Na Mlavi then taxi few miles to the spa. Just an idea for a food review. Keep up the good videos.
