This is a good project with a confusing name. A trebuchet is not a catapult and a catapult is not a trebuchet. It's either one or the other. A catapult uses tension (ie spring) for power with a rigid projectile holder. A trebuchet uses weight for power with a flexible sling as a projectile holder and speed multiplier. This unit uses weight and a sling and is thus a trebuchet. Historically it's an example of a technological improvement over the catapult. For demo and teaching purposes it would be good to build both to show the differences.

The angle of the paperclip tip affects the flight of the projectile. Maybe that's it

There’s a hot glue gun in the video, but wood glue works better in some scenarios
It's pretty hard to beat liquid or paste type glue. Hot glue is ok if there's no other choice such as when setup time must be minimal.
