Love the use of 360! When it comes to a raw rapids ride, Infinity Falls is the best I’ve ever been on. The other contenders in FL each stand out in their own way but seem to rely heavily on key aspects to keep them on radar. Congo River rapids has the two fire hose elements directly after the waterfall. If they aren’t turned on or if the raft is too far away you have a chance coming off dry. Kali River Rapids is nothing without the deforestation drop and Popeyes in my opinion relies more on overhead water elements but does flood the raft with the boat wash drop. Popeyes is extremely themed and has a wide amount of water elements but I find it much calmer than Infinity Falls.

Does sea world give any issues recording on attractions? What camera do you recommend for when I go in a few months ?

No issues, you just need a hand or chest mount. I use the GoPro Hero11 and Insta360 One RS 360.
