Everything about prep is true, we come in at 6AM and prep everything from the wings you consume, the tortillas, the sauces and dips, etc. Having that 5 hour window sometimes wasnt enough for the amount of prep we actually needed. This is all thoroughly accurate from a BOH standpoint. The cheesecake factory in Indianapolis is legendary for courting diners from hours away each weekend. I imagine others have similar effects. Their proximity to malls is synergistic: diners make a day out of their trip to the big city by shopping and then going to Cheesecake. And in return, Cheesecake gets patronage during off-hours and the guaranteed crowds it needs to sustain its large menu and table count. It's kind of genius.

You explained what has changed with Olive Garden over time. The one in my town is very old, it used to be the hotest place in town with an hour plus wait for prime dinner hours every night. They remodeled it a few years ago to be like other Olive Gardens, gone are the comfey cusioned chairs on wheels, and unique archeticture. The food doesn't have the wow taste it used to have, it kinda just tastes reheated. The idea that Olive Garden is just the corporate shell of its former self makes sense.

The "throw all cuisines together" is a very common theme in many indian multi-cuisine restaurants too. Mostly they're starting out with North Indian, mainly Punjabi dishes, South Indian dishes, Indian Chinese/Kolkata Chinese, sandwiches, juices, chats (small plate spiced combinations of crispy and fried items) and nowadays pizzas, burgers and a few mexican (nachos and tacos mainly) and middle eastern dishes (shawarma, hummus variations) will peak through.

This really reminds me when I went to the countryside in my country and went to the local restaurants. Their menus tend to have a lot of variety, there's really no real theme except what the owners want to make and can make. So pizza to sushi boats to bone marrow soups to all day breakfasts. The area isn't really dense so specialized shops don't do well, so the few restaurants around try to offer as much as they can.

Yes it is all scratch except the cheesecakes. As a line chef and prep cook there for 2 years now I have only learned how to make half the menu as well as all of the sauces and most other prep that comes in at 6 am. We don't make EVERY sauce every day. Thays actually impossible but we do make anywhere from 25-90 sauces each day depending on the time of year. It's so expensive because of all the work that goes into trying to produce high quality scratch made food at an exceptionally fast rate. It may be a lot of calories and big portions but as long as you don't eat there everyday, 1 day of 3000 calories won't kill you. I'm very proud to be a chef at the cheesecake factory 😄

I'm pretty neutral on the Cheesecake factory. It has some big pros for sure, but also some cons that bring it back down to earth. This made me slightly more appreciate the corporation though. I do love how they can customize everything, especially since I am picky, my roomate is picky, and we both have dietary restrictions on top of that.
The fact they make everything also explains why it's one of the only "fast casual" restaurants I have been to where they semi-regularly run out of certain items the later you go. In my experience, they go above and beyond to accomidate when it happens, but I have had a LOT of plans thrown off by them being out of something (I got a shepherd's pie with rice instead of mashed potatos recently...).
The food isn't INCREDIBLE, but it is in massive portions and with tons of butter and salt which is great. I'm actually underweight, so the cheesecake factory is one of the few places I can eat at where it doesn't feel like they are shoving "low cal" options down your throat.

An interesting if unexpectedly uncritical (of the Factory) video. I’d have been interested to hear about how they manage inevitabilities such as food waste and quality control. Most restaurants have a small menu, not just because food waste is expensive and wasteful, but also because it’s really hard to make sure 200+ locations can always properly make 250+ dishes. If they found a way, you certainly didn’t mention it.

I'd imagine they employ a food use order or have some core ingredients that can be prepared one way or another by dish, as well as average order estimates by locale. It's like playing Doodle God (the old mix and match game) with food. Just mix, match, and repurpose core ingredients to get what you want and now you have 250 items. Go to a quick serve place like Corner Bakery or Panera and you'll see that they don't have many core ingredients and reuse a bunch to have more variety than it may appear.
