      It’s a brewing time setting. Water flows while pressing the button and save this volume (not time). After this you can press shortly for the same result with same ground.

      I discovered this too that it is by volume and not timing. I weight the portafilter before and after. For example if the weight increase by 25g and I want 40g output of coffee, I have to program 65g of water out. The timing is around 14s with empty portafilter.

    Well done, and it looks amazing coming through the bottomless portafilter. I just ordered a nonpressurised basket for my Dedica, waiting for it to come in. Have you found it relatively easy to pull consistent nonpressurised shots with the Dedica? Or does it vary?

      I think Dedica is not as stable as Marzocco, but repeatability is reasonably possible. In the presence of a good coffee grinder, accurate weights, compliance with the entire sequence.

    Hi, thanks you for your dialing in video with your Hario grinder. I got the Skerton Plus recently and it seems like the burr is wobbling although it still able to give very fine grinding. Can I check with you, what is your target parameters as i am seeing you trying to hit 35g of espresso at a duration of 28~30sec.

      Hi! My start target is ratio 1:2 of espresso in 25-35 sec. It depends on all around: beans, humidity, air temperature, air pressure, my mood, subjective perception of taste

    Hi i have a unpressurised basket for my delonghi dedica ec685 and a kg79 grinder at the start i got really good shots but over time the shots got vert fast and spits everywhere and it was on the finest setting since i got it so i knew my grinder was bad so i got coffee grinds at a caffe and it choked my unpressurised basket if the grinds were just a tad coarser id say i would have got a good shot i got the unpressurised basket from amazon do you think my basket is not good or do i need a coarser grind thanks

    Good video, it makes sense now why my Sage Barista in my primary residence creates a good tasting espresso, and why the Delonghi Dedica in my holiday shed doesn't. Tamping pressure seems to have less less sensitivity on the Delonghi ( the supplied plastic tamper, what a joke that thing is ), and it didn't occur to me before that it's the single hole in the basket that was creating the pressure. Gonna get a non-pressurised basket, and a proper tamper. Hope it solves the issue, but I just get the feeling that it won't ever be as good as the Sage, the pressure guage is a good indicator of grind size and tamp pressure.

      Thank you very much for comment and sorry for the late answer. The second grinder is the Comandante C40. And yes... itis much better than Hario... but more expensive. It has really good burrs and click system for adjustment.

    Hey there! I've the same combination, which is delonghi dedica and hario skerton plus. I have a question. Does the scale do its job properly, does it weigh truly and does it fit to the small place delonghi have under the portafilter? Cause I've seen this scale before and unfortunately not ALL the legs of it (the ones on the buttom where you should put on a flat surface to weigh accurately) would sit on the small place the machine has. What I wonder is even not all the legs sit on that place, does it weigh reliably? Thanks a lot.

    wow great video! What basket did you use and how did you cut the portafilter? I need this set up soooo badley.. there is just no way to make great espresso with a pressurised basket.

      it depends on the density of the beans, roasting, temperature, humidity,
      how new are the burrs and their balance and more of another factors. For one of my coffee it is 1.5, for second - 1, for third - 2.

    I was trying to use the M8 lock nut, but it stops after a few turns as the plastic at the top doesn't having any threading to allow the nut to go through, i think am missing something... Could you please explain how did you get the nut to go all the way through?

      you have to force it, use the wrench and apply more force until the plastic goes on the thread

    Nice and almost scientific approach.
    How many seconds/minutes/hours does it take to grind with the Hario for 1 cup of espresso?

      It took 1.5-2 minutes. But I don't use Hario anymore. Even for the V60. Ceramic burrs is not good. It gives chance to make an espresso but it difficult and unrepeatable

      @@GreenBeanCoffee thanks! Use myself Eureka Mignon electric grinder. Hario is meant for a present for someone who drinks occasionally Espresso with pre-ground so this should be an upgrade. 1,5-2 min should be manageable. The Comandante is hardly anywhere available in Germany / back order and goes for 250€ or more.

      Yes, they are adjusted. I choose right dose and right grinder adjustment. After that I have programmed the duration of the water spill for the same result every time.

    Good job! Are there any difference between Hario Skerton and Hario MSS-1 slim? I'm currently using a bodum grinder (not fine enough to use a non-presurized basket) with the same coffee machine and scale that yours and steel tamper.

      There are difference. The wheel is more stabilized. MSS-1 has "click" adjustment system. I think the MSS-1 a little bit better, but it has too ceramic burrs. Stainless steel burrs are better.

    I'm getting really confused about all the different timing discussions. I know it's only a starting point and matters more for a good reference but you start counting from hitting the button right? You include the pre infusion time to the final shot of 28 seconds. Thanks in advance. Small remark -> this is by far the best cut off portafilter job I have seen 👌

      James Hoffmann has a separate video where he talks about timing. In conclusion "better to start timing from hitting the button with the pre infusion included as long as you're a beginner and not experienced with different tastes and notes in different timing" , I hope it helps

    I have already bought bottomless porafilter on aliexpress. It needs different grind than regular dedica portafilter or different pressure with temper? with nacked portafilter my espresso with the same coffee has no foam or deLongi has problems to make it (no water is floating).

      Right way! Yes, it need other grind because in this non pressurized basket, the pressure resistance is created only by the coffee tablet. Each kind of coffee beans need own grind. Not very fresh beans are a common reason for shot without the crema

      Try to find fresh coffee from the roastery. It may cost some 30-40e per kilo. If you are from Poland, there is a good roastery.

    What temperature setting do you use?

      Hi! I made the temperature test and choose the 1:st temperature setting. It makes 93-94 degrees WITH coffee in basket. Yes, I put the sensor into the basket =). The second temperature setting makes about 97 degrees. But... of course it depends on taste

    Hi there, thanks for the video. I have the same ec685, but using the unpressurized basket, there is almost no crema. Beside that the water flow are not very stable, there are holes that water cant come out, do you know this kind of problems came from grind size/temperature/quality of the beans... (I've used freshbeans also).. Thanks..

      Very very good question. My experience tell me that crema depends on beans freshness and quality. If you take freshly roasted beans for espresso, I think you must to get the good crema. Because crema is just indication how much CO2 coffee contains. Small roastery or buy some espresso beans from good caffe.

      If you change the basket to unpressurized you have to change the water pressure which is designed to the original pressurized basket.

      Maybe... Unfortunately I don’t know what pressure is in the brewing camera. Here is a 15 bars pump. Between pump and brewcamera is pressure regulator. I think and I hope it has to be about 9 bars. Required resistance makes by ground level

    You got to get an electric grinder 19g to maybe 24g not so course problem solved. The tamping might be too hard one push shine?? Oh and about 22 to 25 tops just saying :)

      In this video, I used beans from a local roast. Try the freshest you can find. Any coffee from the mass market does not give a normal result.

      For example, reduce grinding in an empty coffee grinder until rotation stops. Or you can choose for yourself any other starting point from which grinding will be regulated. The main thing is to leave the remaining parameters unchanged. That is, to adjust only one parameter during the setup process.

    how about before you put or modified it with the lock nut, you try just 2 clicks? 1 click was too fine as I showed on the video, but how about 2 clicks? i just wonder. cause I still don't understand the modification you did

      after so many tries, I can say this Hario is not good to make an espresso. I tried the Comandante C40 and grinder from China - Timemore. They are much better than Hario with ceramics burrs.

      You can show me your results again. Do you have a scale? Did you get any instructions from seller with your non pressurized basket? How many grams of coffee do you use in each portion?

      Sí. Pero me di cuenta de que esto tampoco ayuda mucho. Este molinillo no es adecuado para espresso. La molienda es muy inestable. Aconsejaría mejor comprar Timemore Chestnut C2

    Did you notice a difference in taste? the non-pressurized basket is worth using

      it's like playing the violin. With non pressurized basket you have much more variations and more control. The coffee machine is only a tool. Good Taste needs good Ingredients. I prefer to non pressurized.

      For the result like mine I take freshly roasted for espresso good quality coffee beans. With a beans from market I can’t get good results too

    Hario Skerton is look like not so smart. so many tools and step to turn up
    coarseness .

      Yes. It is not very good for espresso. But it is cheap (maybe cheapest) way to do it. It is my first grinder in my espresso story. Also I have handgrinder Comandante C40 and electrical Fiorenzato F4e nano. Of course they are more technology and smart. But prices.... 230€ and 450€

      @@GreenBeanCoffee I use timemore C2, it was 59.3€,but I'm not sure is it the best one. I using EC685 same with you, and thinking refit a new milk steamer tube to it, the original one is so hard to make a latte art for me. I had seen your Delonghi Dedica milk frothing, nice technical and make me so surprise it can do a nice milk foam .

      👍🏻 very good! I ordered also Timemore Chestnut C2 for my dad! It’s looks like my Comandante. But I’m not sure about materials quality. How long do you use this grinder? Is it well made?

      ​@@GreenBeanCoffee C2 is my first grinder used around half months, but I feel it's great, can make coffee size fine and easy to turn, I'm not sure is it made very fine but feel good. I choose
      Italian Steel grinding core, I think it should be keep sharp for a long time.
