Wow. Seeing the chicken in those huge smokers really brings home the point that smoke is the essence of jerk chicken. This fact is almost always hidden from view. Because usually, you just show up at a Jamaican takeout spot and you get the jerk chicken in a box or it's lying out in a steam tray. You don't see how it's prepared. But, with this festival...the jerk method is showcased in all its glory.
