The Only Tomato Sauce You’ll Ever Need I Frankie Celenza

  • Who knew there was a Swiss Army Knife of tomato sauces?
    INGREDIENTS:
    4 medium tomatoes
    Olive oil
    1 clove garlic, crushed
    1/4 cup white wine (can be a pilsner beer, water, or even broth)
    Red pepper, to taste
    Salt, to taste
    STEPS:
    1.) Bring a pot of water to a boil. While water is heating, use a paring knife to cut an 'x' in the top of each tomato.
    2.) Put the tomatoes in the boiling water for 20-30 seconds. Pull them out using a slotted spoon, and immediately put them in the ice bath to chill.
    3.) Peel the tomatoes. Cut them in quarters and remove the seeds, then thinly slice.
    4.) Add oil to a pan on medium-high heat. Add garlic to the oil and sauté until fragrant. Add a 1/4 cup of white wine, beer, water, or broth. Add the tomatoes and cook until reduced and tomatoes have melted, about 10 minutes. Salt to taste.

    I'm a bit of a cooking afficiaonado, and like simple, healthy but tasty food, and I had a go at this, only used onion and a bit of red pesto, and chucked some tarragon in, very nice on tagilatelle and even nicer in my tummy!
    Frankie's great, laid back, funny and not everything is perfect, he measures by eye and spills stuff, which makes him better. Bellisimo sauce!

    The white stuff and seeds are full of umami, sprinkle them with salt and strain them, collect what comes out and you've got an umami bomb to add to your sauce.

      Clearly they are savory, and sweet and a little bitter, as well as rather acid. If you're being fussy about someone using the word umami to please consider that it's not only technically the correct word for the 'flavour' and sensation of savouriness (specifically for the detection of glutamic acids), but that there is also a herb called savory, which means that it's not safe or sensible to call the flavour of glutamic acids savory in a culinary context as it can cause confusion. The correct word is umami, it may be overused in some contexts, but it is correct.

      @1234 umami is basically the extra taste sense of "tastiness." You have sweet, sour, bitter, salty, and then the last one is "umami." Most people associate umami with MSG, but not all umami rich products involve MSG. It's pretty much tastiness, flavor boost that you can't describe as primarily any of the other categories.

      My mother also always takes away the seeds, but when I do get ahold of the kitchen, I cook tomatoes with the seeds. Seems wasteful not to, plus I love the acidity and that added umami.

    I strain my tomato sauce to take out the seeds and to make it smoother, but I cook it with the seeds, pulp and skin left in. I find they add more flavour.

    The gel around the seeds... that's where all that delicious tanginess is. I don't recall if this was on CZcams or even Food Network years ago, but they made their own ketchup and wanted it to have a really strong tanginess to it, they found that that flavor comes from the gel between the seed and the flesh. I think they ended up using that gel from like 30 tomatoes and only half as many actual tomatoes.
    I get this isn't ketchup, but that gel is some important shit.

    Frankie, you are SO FUN to watch! You remind me of the magic and pleasure of cooking. I often dread it due to it being time consuming and having so much mess to clean up after with all the pots and pans. But you remind me WHY cooking is an art form and can even be a joyful meditation! I have never made home made tomato sauce aka 'gravy' in my entire life! This recipe looks fun and easy!

    Hey guys! I really want to try this tonight but I have a question about portions. In the description it says to use 4 medium tomatos, and in the video Frankie demonstrates with 4 tomatos. But there are already a ton of tomatos in the bowl prepared. Should we use 8, or was that just there to make the video look nice and will 4 suffice?

      Cole Carlin you're cooking not baking, this recipe especially isn't an exact science. Think about how much sauce you want to make and then adjust the amount of tomatoes you use.

      Neelam M Pawar Use These Substitutes for White Wine: 🙂👇🏽
      White wine vinegar: This is an ideal substitute for dry white wine, especially when its purpose is to deglaze a pan. Made from white wine, white wine vinegar has many of the same flavor characteristics, minus the alcohol.
      Lemon juice: This is another good substitute for deglazing. Fresh lemon juice is a good way to replicate the tangy flavor white wine brings to a dish. Dilute the lemon juice with an equal amount of water to prevent it from being too overpowering.

      Tomato peel = unwanted bitterness
      Garlic peel = mild deep garlic taste. It's like a garlic bay leaf.

    Don’t pick garlic up with your hands like that use a scraper to lift it off of the board and into the hot oil! I’m sure you have plenty scrapers in your kitchen :-)

    Tomatoes cost $1.48/lb they're a bit on the expensive side when you have a family of four :( especially if 1/4 of each tomato will get wasted in this sauce

      NighteeeY tomatoes are actually quite sweet themselves without the seeds or skin-they're bitter so that's why you tend to compensate
