      Gotta go to San Diego if you're looking for Chamorro / Guam food. There's Guahan Grill (2 locations), Chamorro Grill, Smak'n Guamanian Grill and JJ's Island Grindz to name a few.

    Awesome video . I use One cup of Gingerale, 7up, or coke works if I don't have brown sugar. Everybody in my neighborhood stomach growls and are used to dry rubs and BBQ sauce. Lol

    Can we cut the ribs in ones during the marinate? To cook individually?

    A true Chamorro don't use any sugar just lemon,or tuba or regular vinegar chopped onions garlic & some hot peppers if desired. That's probably Asian recipe we don't use any sugar period that's not Guam barbecue period!! Almost forgot the Soy sauce add according to your taste also marinate over night is the best true Chamorro recipe!!!! Been barbecuing over 50 years Chamorro recipes I am 70 years old now.

    Great recipe but not traditional Chamoru ribs marinate. Asian marinate for sure. Chamorro marinate doesnt use sugar in any. Thats asian influence.

      Thanks for dropping in, Mr. Moses. Where are you from? How much do you really know about Chamorro food? Granted, this was not part of the ancient Chamorro diet. But we are far from ancient times, and Chamorro food is an assimilation of cultures over thousands of years, from Spain, Mexico, Asia, etc. By the way, soy sauce was borrowed from Asia. Ancient Chamorros are from Asia.

      @@GuamMamaCooks im from Agat. My mother is Sablan and my father was American. Im retired military and was taught how to cook on Guam by family and i spent many years cooking for Guam liberations while stationed in Fayetteville NC one of the largest Chamorro populations in NC due to the army and AF base there. Im no stranger to Chamorro cooking. Stationed japan and korea and learned their cooking too which is why i know its an asian version similar to ours. You put lots of your own versions of traditional Chamorro recipes and so does many other people because we like to experiment and find our own flavors. I use brown sugar in mine as well. I enjoy the sweet and tangy and i follow many of your dishes for years. Your food is amazing. I was only saying it isnt traditional but it is wonderfully tasting. Sorry if i didnt make that clear in my original post. I do find it interesting..you ask as if because my last name isnt Chamorro that i wouldnt know what i was saying. Its ok though its pretty common by our people to do that in my experiences with meeting Chamorros

    • @GuamMamaCooks
      @GuamMamaCooks  Před 3 lety +2

      No, I never assume one is Chamorro or not based on last name. Was born and raised on Guam too. There is a lot we don't know about our food because much of it wasn't written down. What we cook today is different from before the war, from 100 years ago, from 400 years ago. Our cuisine has changed even in the last 50 years, and it will continue to change, thus the work I do. Our food is so interconnected with Spain and Latin American countries, the rest of Micronesia, and Asia. Soy sauce is relatively new in our food as well.

      @brian Moses depends which chamorro you're talking about. "Guamanians" don't use sugar but alot of "saipanese" use sugar as well as ginger.
      And curious, what is considered traditional chamorro rib marinade?
