- My sister joins us today to share her puha and mussel toroi recipe. A simple healthy and cheap dish that is popular with many Māori here in New Zealand.
There are a few ways to make toroi and this is a good recipe without adding salt as some recipes say including the recipe I made in a video a while ago. ( You can view that video below)

Love toroi, raw diced onion, pikopiko, a dash of sugar and salt, puha & mussels then leave in the pantry for 4-6 weeks. Tino kai reka!
Great video, Kia ora mo tena. I'm 60 and remember my mums toroi as a teenager, we lost her 40 years ago now and her toroi recipe with her. This is as close as it gets for me, so been following this recipe, little bit of onions and a drop of vinegar, remembering she used raw kukus back then, and a little bit of sugar! l was never one for mussels but when a good friend of mine brought toroi to our function l was so plastic never in my life did l ever hear of it oh my but when l tasted it, it felt like l was in heaven it was delicious mmmmmm

Yum I love fresh toroi just puha and mussel. I blanch the puha in boiling water with a bit of the mussel juice as its usually salty enough, with the puha still abit crunchy. Add some puha to jar add raw mussels wait for about 5mins for mussels to slightly cook in juice and wala done

Its always the case us brothers love to cook but our sisters always show as up and we learn so much from them on how we can cook and prep a lot better 😉

Love it, grew up on "whakamara", always open to different ways of serving our kai, our Mum was from the Urewera bush and our Dad grew up by the Whakatane river and the sea,, the combination culinary wise was exceptional

Awe that looks delicious 🤤. I made my first ever toroi last week but used watercress & did it just like that but put in some finely chopped garlic & a sprinkle of chilli flakes. Made one very large jar full. The garlic really gave it a flavour boost! But could have gone without it. It only lasted me a few days 😩. But am making more soon! Awesome video. Your Sister must really love you.

Primo! Made my 1st brew of toroi (4 jars) last night with your 1st vid on making toroi with success. This'll be my 'go-to' from now on. I added garlic, onion, ground pepper out of the mill & a splash of malt viniger. Will experiment with ingredients, more & less, to get a stockpile of tasty feeds to munch on as desired. Kia ora to you & your sis for doing the mahi to get this vid up! PS: My brew was heavy on the kutai & they went in whole - reka!

As a young boy, can recall getting stuck into the stuff & I haven't eaten toroi for over 1/2 a century. But I can vividly recall the taste omg, making my mouth salivate. Gonna make some this week, cheers for posting👍
Back in the day my mates dad Peter Pou had a jar of this that was well over a year old and he offered me some while we were on the piss.
I can't remember the exact taste but I'd never tasted anything like it and it tasted awesome.
I ended up eating the whole jar.
Mum's good friend used to eat rotten corn apparently the taste was nothing like the smell and it used to drive their neighbours nuts. If it tasted good I'd eat it no dramas.
Sad to say, but yes there are a lot of maori today who are offended with the odour of kanga piro, engari they'll eat cheese, yogurt and drink wai piro and not bat an eye,hei aha!
@@kamauwikeepa7308cant compare the smell of cheese or yogurt to the smell of kanga pirau. Kanga pirau smells like literal vomit.

Tbh i dont eat toroi im a urban maori who grew up in the city whos country cuzzys would always mock for being a fussy eater but i always loved the smell of toroi used to love the way my uncle would eat and crave this brings back memories!!!

I like adding vinegar and sugar with my mussel and puha juices when it's all cooked. Mmm... it's a vinegeritte made in toroī heaven and it's still yummy and healthy lol
That sounds like it will go nice with the puha, white or malt vinegar?
@@WekaDigitalMediaNZ I always use malt and make it to your taste buds level. It's how I like l doing it when marinating my mussels as well (without the puha) along with an onion, cucumber and diced up tomatoes, which can be eaten straight away or.... just like a boil up the next day always tastes the best. 👌
I like to smoke my mssels on a open fire stoked with manuka wood then boil up puha, green onions, Seaweed, asparagus, for 1.5 hrs then jar up with roasted garlic and chilli flakes. Sit it in the cupboard for 5-7 weeks ......omg its delicious

kia ora i miss the old Toroi i remember going back to whakatane to see our koro Monu and i use to go straight to his fridge and eat his Toroi and he would moan and laugh at me, you miight know my dad Puni Tawera yip that was his dad from Ruatoki... TUHOE we love it with that white cabbage is that what you call it, it like spicy and raw onion yummy
Some Tuhoe I know like to open the lid just a little bit let some air in then close it and get some mould on it. I remember seeing that as a kid😳

I was really wanting toroi few weekends back and we have a Saturday market day down town here in Whanganui and went to find some and opened up the punnet I felt robbed cause they used silverbeet it was yuk yay I'm making this toroi tomorrow thank you both ❤️❤️❤️❤️❤️

Hey bro, wheres the 2week taste test? Also what would the maximum time period to let it sit for and do you leave it in the fridge or sit in a cupboard? Is it true that the longer you leave it the better it becomes? Look forward to all your answers

My darling made his toroi with pikopiko chilly and garlic, before he passed away he used my dads toroi recipe using titi juice, tasted just like dads toroi. I miss them both dearly
