To the best of my understanding through research, these are the torque specs and part numbers of the caliper bolts, which you are encouraged to replace, especially the guide bolts.
Front caliper mount bolt (190 Nm torque) (part N90948802)
Front caliper guide bolt (30 Nm torque) (part H5025W)
Rear caliper mount bolt (90 Nm torque + 90 degrees) (part N91168901)
Rear caliper guide bolt (35 Nm torque) (part 14130)

I hear you I’m about to start day/attempt 3 from doing a rear drums to disc swap video on my Mk6 Jetta SE. Had to get shorter bolts for the caliper bracket (to the spindle) because I have the non independent torsion beam suspension on the Mk6 Jetta which has a much thinner spindle. The bolts for the GTI are longer because of the spindle being thicker. Wish I woulda known this before because I kept threading it in and clamped the caliper bracket to the rotor on accident! Haha the rotor is new too and there’s a very small grove with a little red mark from the caliper bracket imbedded to the rotor. Do you think the rotor is toast?

A few items unmentioned that i will add: first time user of the caliper piston reset tool- place wrench inside the caliper between the plate and the lip of the clasp (that wraps around thread). This is so that when you are done winding the piston back, the tool will easily removed. I unknowingly made this mistake (plate was tight against clasp lip and thus very firmly clamped inside caliper. Lucky for me I was able to hammer it free.. but that was a colossal waste of time. Learn from my mistake. Also, if you are in your driveway on blocks: you will need to invent a 90° pipe extension for a stubby breaker bar to undo those 14M triple square bolts.
