  • Pan seared scallops are such an elegant yet EASY dinner for two-that takes only 10 minutes to prep! Served with coconut milk cauliflower rice & a fresh mango salsa, it’s the perfect quick dinner idea for a date night or a special meal at home.
    Most people assume cooking scallops at home is really hard or complicated, but scallops seared in butter are actually SO simple to prepare! They’re light, flavorful, and rich in protein. And scallops also cook very quickly, so they’re my go-to choice when I want to make a fancier homecooked meal without spending a ton of time on it.
    First, I’m sharing 2 quick & easy side dishes that I like to pair with my healthy scallops dinner: A zesty mango jalapeño salsa that complements the butter scallops perfectly, and a creamy coconut cauliflower rice that you can make with frozen riced cauliflower.
    Then, I’ll walk you through how to pan sear scallops in butter (or oil) on the stove, so you end up with perfect seared scallops every time-even if you’re a beginner!     My easy to go healthy dinner is canned salmon salad. I recently learned that I have anemia and I found scallops in the list of high iron food but I won't buy them, they are so expensive where I live, they are as expensive as lobster.
