The secret to a juicy salt mackerel recipe

Juicy and delicious Jamaican style cook up salt mackerel / the secret to getting your sat mackerel soft and juicy is to cover the pot for a couple minutes so that it can retain the moisture.
Ingredients used:
Salt mackerel
4 tomatoes ( tomatoes are vital in this dish)
Onions cut in rings
Scallion
Bell peppers (multi color for beautification of the dish)
Black pepper
Scotch bonnet pepper (I used jalapeños since I was out of scotch bonnet)
