Nintendo has Nintendo EPD which is an internal division in nintendo itself, which is broken into 11 production groups. Then retro, ndcube, monolith, next level games, NST, NERD, nintendo pictures, ique and 1up studio as studios/companies that develop or help with development. its not hard to look at that, its all available in wikipedia or nintendo wikia.

Given that Nintendo now definitely recognises MK as its biggest series and, especially if the Switch successor ends up being backwards compatible (meaning people would just be able to stick to MK8DX), I think the long silence from the MK team could indicate a title that's bigger than we've ever had-the SSB Ultimate of the Mario Kart series, so to speak.
I've been speculating that they've been working on remaking every single track of the series in high-poly, and what we got in MKT/BCP is simply a portion of what they had done up until then. Improving the quality of those models mainly through better textures, shaders and lighting (and also simply existing in a game MADE for the models' artstyle, as MK8DX definitely wasn't) would take far less work than remaking the entire models from the ground up once more, and Tour already contained more than HALF the tracks across the series, over 100, which is genuinely impressive-and it even had datamined signs of more tracks existing than what we ended up getting! Mario Kart 8's attempt at realism was cool back in the day, but in the end, I don't think that realism suits the series at all and only made the base game's tracks age far worse far quicker, so I think a more polished cartoony look would both help them save dev resources (letting them make far more courses in a more reasonable amount of dev time) and also return to the series's roots like with SMK and Double Dash!!. Plus, if Mario Kart becomes cartoonier again, F-Zero could coexist with it a lot more easily, with the latter getting the more hyperrealistic graphics instead.
That being said, I do think it would be a good move to also rerelease Mario Kart: Double Dash!! in one way or another, on the current Switch. It got somewhat gutted in the BCP pretty consistently, with none of its tracks making it into the entire first half of the pass, and one of the GCN traffic courses seemingly getting replaced with Moonview Highway, so perhaps that was done intentionally with the idea of "we're giving them the gamecube tracks in due time anyway"? Plus, having its unique two-player modes easily playable anywhere with the joycon feels like a perfect opportunity for this game. I think it would make for a decent 2024 holiday title, or perhaps a few months earlier if they decide to also add online multiplayer to it, to get people to extend their subscriptions especially with nothing major we know of coming out late this year.

An Arms 2 with a more fully developed single player would be something I'd absolutely pick up for the Switch 2, and 7 years - even with the Booster Pass - feels like enough time to make two games.
A video breaking down what New IP Nintendo have put out in the past... Decade or two, not sure what would be a good time frame for that... Compared to various other publishers would be interesting considering this is something Nintendo often gets criticized for. Especially if you used that data to do a forecast on what we can expect for the Switch 2 in terms of new IP.

Willing to bet that if they have a second title in development itll be cross-gen and appeal more to casual audience. We've already gotten Pokemon Legends Z (unless GF are unimaginably stupid) and a new 3D Mario basically confirmed as Switch 2 launch titles, and if they're like previous titles they moreso target the hardcore demographic. I think its likely that Nintendo will focus on casual titles for Switch 1 while keeping the stuff their hardcore audience really wants as Switch 2 exclusive, since one group is much more likely to early adopt than the other.
