  • Hi there! Here’s another installment of me making tasty, (pretty) healthy vegan treats and snacks, inspired by your suggestions! Thank you for all those amazing ideas! We’ve got tasty sweet potato müsli bars in this one, super lazy apple and peanut butter pudding, homemade vegan protein bars, delicious bean wraps and more!

    ✨INGREDIENTS✨
    What’s a lazy vegan snack you can recommend? Leave it in the comment section!
    #1 Chocolate and Peanut Butter Protein Bars
    1/2 cup oats (45g)
    1/3 cup vegan vanilla protein powder (40g) or if you want less of a protein powder-y flavour do only ¼ cup (25g) and add like 2 tbsp more oat flour - or skip the protein powder and do ½ cup + ⅓ cup of oat flour (78g).
    a generous pinch of salt
    1 tbsp flax seeds, ground
    1/2 cup natural peanut butter (120g)
    1/4 cup apple sauce (62g)
    1/2 tsp vanilla
    3 tbsp rice, agave, maple or date syrup
    1-2 tbsp non dairy milk, if needed
    100g dark vegan chocolate, melted (optional add 1 tsp of coconut oil for the bars to have a glossy look) (3.5oz)
    Notes:
    → the protein powder I use is very sweet itself because it has stevia in it, taste test the mix before shaping it into bars to see if it's sweet enough for you
    → dip the bars into a deep dish plate filled with the melted chocolate before letting them sit on some parchment paper
    → yields 8-10 bars
    #2 Hummus Yogurt Toast
    2 pieces of toast
    hummus
    unsweetened soy yogurt (i did about 1 tbsp per toast)
    cucumber
    herby salt or other spices of choice
    → serves 1

    #3 Tofu + Grapes
    tofu, raw (or smoked 👀)
    grapes
    lemme know your thoughts on this one haha
    #4 Sweet Potato Müsli Bars
    1 large sized sweet potato or two smaller ones (~ 400g)
    a big handful of nuts, chopped (would recommend almonds or pecans the most)
    generous pinch of salt
    ¼ tsp cinnamon
    ½ tsp baking powder
    1 cup oat flour (100g)
    4-5 tbsp small cut oats, add more if needed
    2-3 tbsp raw cane sugar or coconut sugar
    2-4 tbsp melted vegan chocolate
    → makes enough for a small square shaped baking tin, something like 8x8 inch (20 x 20 cm), basically the bars should be about 2 cm in thickness
    → yields 7-10 bars

    #5 Peanut Butter Apple Pudding
    3-4 tbsp unsweetened applesauce
    2 tsp natural peanut butter
    a pinch of cinnamon
    → serves 1
    #6 Tahini & Date Snack
    either dates dipped into tahini
    or
    1 tbsp of tahini
    1-2 tsp date syrup or maple syrup (or adjust the tahini and syrup ratio to your liking)
    toast, cut into little triangles
    → serves 1

    #7 Bean Wraps
    1 cup kidney beans, rinsed and drained (180g)
    ½ onion, chopped (or just use a small one)
    spices of choice - I did: ½ tsp curry powder, ½ tsp paprika, ¼ tsp salt
    2 large handfuls or 2 cups of fresh spinach, chopped
    ½ cup bread crumbs (60g)
    oil for the pan
    also 3-4 tortillas
    vegan cream cheese or hummus
    bbq or marinara sauce
    more fresh spinach
    yields 3-4 wraps

    My favourite way to eat tofu:
    Cut a block of regular or smoked tofu into two flat blocks (I really don't know how to describe that) and cut those in triangles. Drizzle some soy sauce over the tofu and let it sit for ten minutes.
    Prepare three bowls: one with flour and smoked paprika (or other seasoning of choice), one with non-dairy milk and one with sesame seeds.
    Put the tofu in the flour, then in the milk and lastly coat it in sesame seeds (those should stick to the tofu then).
    Pan-fry for 3 to 4 minutes per side in some oil and enjoy :)

      I tried something similar in a restaurant. They coated the tofu in coconut shreds and served them with cranberry jam. This was sooo good. I think they didn‘t soak it in soy sauce. It has that baked Camembert feeling to it... I will try your version for sure!

    I like peanut butter with noodles, it is SOOOO good! Although the it’s more of a meal, here’s how I make it,, On one side, I put a pack of noodles to boil. I stir fry 2 cloves of finely chopped garlic, along with a tablespoon of grated ginger in sesame oil, to which I add the peanut butter sauce: the sauce has: 3-4 tablespoons of natural unsweetened peanut butter, 1 tablespoon of soy sauce, 1 tablespoon of chili sauce, 1 teaspoon of any cooking vinegar (I use apple cider), 2tsps of brown sugar/ a splash of the sweetener of your choice + 2-3 tablespoons of hot water (make sure it’s hot!! so that the sauce emulsifies well together). Make sure your flame is on medium low after you add the sauce,, and then mix in your noodles and also veggies of your choice (I like baby corn and broccolini) and season to taste with salt 💕💕 these are sooooo good, I hope u enjoy

      I snack noodles with peanut butter sauce too but I even use mie noodles and let them sit for a few minutes in hot water while i finish the sauce. This way I dont even have to use another pot and also I add smoked tofu. Its my favorite late night snack :D glad to see Im not the only one

    my like extremely easy but such a good snack is: frozen grapes, it’s such a good refreshment in summer but I also eat in in winter because I love it so much!

      I've also seen where you can blend just frozen grapes (and maybe add a little sweetener) and it makes a yummy sorbet type dessert!

    You need to try a thing called fitmisù! It’s perfect as a snack, but it’s great for breakfast as well! It’s basically a healthy but still super delicious version of the tiramisù. It’s made with rusks (I’m pretty sure you call them zwieback in german), usually 3 or 4, soaked in coffee or even barley coffee and layered with plain vegan yogurt, all topped with more yogurt and dusted with cocoa or cacao powder. You can also drizzle some kind of nut butter on top if you fancy it!

    laziest, best and tastiest snack i’ve recently discovered!! just take pitted dates (no seed), fill them with some peanut butter and freeze them! they’ll be like tiny tasty candies once frozen, just take out how many you prefer and enjoy x

    Lazy snacks for me are: popcorn w nutritional yeast and salt // a Japanese style cucumber salad (sunomono)- it’s so good! I mix 1/3 cup rice wine vinegar, 1 tablespoon of soy sauce, 1/2 tablespoon of brown sugar, chili in some form (either freshly chopped red chilli, or chili flakes or a splash of chili oil), 1 teaspoon toasted sesame seeds with some mandolin sliced cucumbers and it’s super exotic😍😫 // Indian street-style corn: stir fry a can’s worth of corn with q little vegan butter on a stove with medium flame, add a squeeze of lemon, some salt to season and a teaspoon of finely chopped green chilies (which have got to be spicy), as soon as you add the chili, turn off the flame and serve the corn with a topping of vegan melty grated cheese (mozzarella or Edam if u find),, and there u goooo enjoyyy💕💕 lotsa love xx

    my version of avocado pudding which I have been making for years!
    You will need:
    -Avocado 1 or 2
    -Sifted cocoa powder a couple of tablespoons depending on your taste
    -Dates 2 or 3 ish maybe 4
    Blend 'em up in a food processor or blender!
    -Almondmilk or other non-dairy milk
    -Any topping of choice! (chia seed pudding, frozen berries, crumbled pecans and fresh pears are great options)
    I don't know the exact amounts of each ingredient because I just eyeball it and taste until its delish!

    SNACK IDEA!!
    Vegan meatballs (it looks like a lot ingrediens, but it is done under 20 minutes!!) , So so jummy and so much yummier than the real ones: you'll need: -half a onion
    -100 ml almonds
    -1 small garlic clove
    -100 ml black beans
    -100 ml streubrot (haha don't know what that is in eng)
    -1 flax egg
    - 1 teaspoon mustard
    - 1 teaspoon soy sauce
    -salt and pepper
    - vegan butter for pan frying
    Blend everything in a food processor and let sit for 10min. Roll little balls and fry them in the butter for maybe 5 min. Dipp in some sauce and have as a snack or with some pasta/potato for a meal! It's SO good please try!!!

    some of my fave super simple vegan snack ideas: (1) Plant based milk (I add toffee stevia !!) + frozen banana slices + Weet bix. (2) rice cake/toasted bread , spreads on unsweetened almond butter and dried cranberries or aohata strawberry jam!! (If I’m REALLY lazy I literally just eat a whole almond and a dried cranberry in one bite) (3) air fried carrot strips - use a peeler to shave wide strips of carrots and air fry at 150C for 7 - 15 min, tossing occasionally!! (4) silken tofu + Cha soba sauce + toasted sesame seeds. Serve chilled (5) air fry canned chickpeas for 10 - 15 min depending on how crunchy you want it, toss it in sweet chilli sauce / any sauce you like

    A great light garbanzo bean mix that is quick and easy to make for people that are busy.
    Serving size: 1
    -1 can of garbanzo beans (drained)
    -7 cherry tomatoes sliced in half or
    1 Roma tomato diced
    - 1/3 of a cucumber diced
    - 1/4 cup onions
    Seasonings:
    -Salt
    -Paprika
    -Onion powder
    -Garlic powder
    -A pinch of cumin
    Optional:
    Drizzle a-little olive oil over it to help the seasonings stick.

    My FAVORITE quick meal. Oyster mushrooms(or your favorite mushrooms) fried in a little vegan butter till crispy, then add nutritional yeast, maple syrup(use the good stuff) and soy sauce and cook for a minute or 2 longer. Add on a toast or a wrap with vegan cream cheese.
    I also like mixing together yogurt, peanut butter and maple syrup to dip fruit in!

    Try mine it’s
    Vegan Ramen with the spice packet sesame seed oil a vegan miso soup packet (optional)
    Cook some paprika’s or tofu in soy sauce and vegan sweet chili sauce
    Put your paprika’s on your noodles and add some sesame seeds on top as well :)

    the best snack is something i learned from my vegan friends and i tried it an it was AMAZING!!!!! You take some black beans and mash them (you can heat them up if you prefer) and take some ketchup salt and pepper. You can then put this on a rice cake or toast or it can be used as a layer in a veggie burger! = Love this series =

    Mina, please try some good tahini! :) (or as Miles from healthy crazy cool would say "proper runny tahini") - I know the brand you had and I understand why you said it can be bitter sometimes, but that's really NOT the way it's supposed to be. I would recommend going to a Middle Eastern Arabic grocery shop in Berlin (I'm sure there are many of them) or a shop that sells Israeli products (like KosherLife or Kosher Daily) and buying tahini there, it will be a completely different product if you haven't tried it yet.

    One delicious snack idea is dates topped with peanut/almond butter. An optional toping is melted chocolate. It is one of my favorite snacks if when I want a natural sweet quick snack.

    I clicked for the picture of the bars. They remind me of my favourite, Nelly's, that ship (they're in refrigerated sections in stores because they're completely all natural, like homemade but better). If you haven't, try their caramel nougat or the dark chocolate or any - I think there are two peanut butter versions, almond, coconut. They're all covered in dark chocolate. Whatever cashew cream or syrup is in some, like the cashew nougat, is so creamy, indulgent. I might try to make one at home, like yours, but I was happy to watch & learn...I'm also about to start on a box of those Nelly's someone has saved in their freezer for me first.

    I was so restless in today's energy and heatwave so I watched half a dozen of your videos but those chocolate pb protein bars stopped me in my tracks!
    I made these tonight and although I ran into some issues with melting the chocolate, they were unbelievably INCREDIBLE! and super easy to make! I added a thin layer of hemp seeds to the top of the bar mixture before drizzling the chocolate over and freezing them and oh! was that a great idea! Thanks so much for these awesome, easy, entertaining & yummy recipes! This treat made this foodie's night! 💜

    One of my favorite vegan desserts is for vegan vanilla apple pound cake!
    1&1/2 cup vegetable oil
    2 cups sugar
    1&1/2 cup apple sauce
    3 tsp vanilla extract
    2 tsp baking powder
    1 tsp salt
    1&1/2 cup almond milk
    3&1/2 cup flour

    This is something I make pretty often and can be very versatile. I use dark kidney beans and (boiled soft) potato as the binding agent and you can add your choice of vegetables to this (I do carrots, cauliflower, and corn). I like to add- cumin, curry powder, garam masala/adobo, paprika, salt, and pepper for seasoning. You can add breadcrumbs or semolina to help them combine. Make these into little patties and shallow fry them with some oil on a pan. I like to have this hot with a side of greek yogurt with cucumber, tomatoes with salt and pepper. You can turn this into a filling for puff pastry, or vegan meat balls, or a vegan pizza base, or eat it with some seasoned rice!

    My favorite snack: spread hummus onto a wrap, roll it up and dunk it into olive oil mixed with a savory spice mix (i use berbere, but I imagine other arabian/african spice mixes would also taste nice) :)

    Tahini with molasses, every Turkish child grew up with that mix. In winter, it is pretty non-negotiable: you need to have some of that spread on your bread for breakfast. They even sell a mixed version of it on supermarkets in Turkey. As a 30 sth y\o who lives in Denmark, I still have that spread for breakfast in winters!
    I prefer mine with carob molasses - since I'm from the south ☺️
    But you can find molasses in Germany for sure!

    I love chickpeas tossed in some olive oil and spices (I use salt pepper garlic powder chili powder and cayenne) baked at about 350-375F for 20-25 minutes (depending on the texture you want). I eat them hot and pretty soft. They could be good on salads bhuddah bowls or anything you think would be good.

    I am addicted to tofu and hummus sandwiches! The tofu can be natural or smoked, so thinly sliced tofu fry in oil until crispy. Season with black pepper and salt. Put hummus on your favorite bread, then slices of tofu and chive! So good :) about 4 slices of tofu per sandwich

    my lazy snacks:
    -pizza bread. Any kind of bread, sliced, with tomato sauce, olives, capers and shredded vegan cheese, in the oven for 15 minutes
    -just plain smoked tofu+sriracha and kimchi wrapped in a nori sheet
    -uncooked tofu sausage by the brand taifun with a sauce of choice wrapped in a lettuce leaf

    My awesome Creamy Pre-Workout oatmeal!
    -2/3cup of rolled oats, cook over stove top, use 50/50 water and cashew milk (Do not microwave your oats for the love of god)
    - dice a banana and add halfway through cooking, along with 1tbsp of cocoa powder
    - (optional) add 1 scoop your favourite protein powder, likely neccessary to add more water
    - once cooked, mix in 1 tbsp of flax seeds and top with 1 cup of dark frozen fruit (blueberry/black cherry mix is my favourite)
    - (optional) top with some cinnimon, and/or a spoon of your favourite nut butter (i usually mix in some pb2 powder)

    The tahini idea reminded me of when I visited Turkey and every morning we would have bread with a tahini and molasses spread that was sooo good! I don’t have tahini often, but I could have that every day

    A nice breakfast or snack i like to make is a a peanut butter (or any nut or seed butter) with pickles and jam sandwich. I like to use whole grain or white bread and I like to cut the pickles into thin slices!

    super simple but pretzels with cranberries is a delightful combination! I was wondering how they tasted together just today and not to my surprise, they were delicious together! I love the combo of the salty pretzels and the sweetness in the cranberries! The perfect healthy salty sweet snack!

    Best healthy vegan mashed potato recipe (it tastes almost like ice cream)
    Steam some purple Okinawan sweet potatoes, peel and chop them, and mash in a bowl. Add some canned coconut milk until you get a smooth ish consistency or a consistency you like, and that’s literally it :) so good

    a super easy spread-type thing i looove to eat it's just a few tablespoons of nutritional yeast (I get one that's almost a powder), with some salt, pepper and a little smoked paprika (or any spices of your choice) and a teaspoon of water. It gets into a paste consistency that I looooove to eat on toast!!

    One of the most difficult things to come across is a good fast source of protein when you need alot of it and maybe you don’t have alot of time and effort to put in, so that first idea is absolutely brilliant. Bonus that it doubles as a proper snack.

    I enjoy vegan vanilla yogurt mixed with peanut butter & top with melted chocolate. I used dark chocolate. Put it in the freezer for ten minutes to harden the top. It’s delish! It’s a decadent, creamy dessert/ snack.

    This is my everyday breakfast and and I know it's not instant but it's yum. 1 tbsp cocoa powder, instant coffee according to taste, any sweetener, any plant based milk and oats. Keep it overnight and boom. You can even just try this without oats, it makes the perfect vegan chocolate milk.

    I'm a new subscriber but I just wanted to say I'm OBSESSED with your recipes and videos!! I have so many videos to get through but I just wanted to thank you! I've always wanted to incorporate more vegan meals but always just found salads, beans, and tofu and it scared me off. I'm seriously going to try ALL of these this week!!!

    I just love crisp bread "Knäckebrot", so I usually fix me some up for a snack. One of my favorite combinations is Knäckebrot toped with mushed avocado, some sesame seeds and chia seeds, salt and a spicy spice mix like Samba Olek or a Barbeque mix - as long as it contains chili flakes.
    Another snack-idea I use way to frequent is various things in rice paper with some sweet-spicy Chutney. Things I put into rice paper include basil tofu, leftover rice (once even leftover chili), cucumber, carrots, bell pepper, avocado and anything leafy. In case of non spicy Chutney add Siracha.
    One of my fav combinations is a Eisbergsalatblatt (salad leaf) with a spoon of rice, half a spoon of chutney, some soy sauce, sesame seeds, sliced avocado and basil Tofu (two slices each) and some fresh cucumber.
