Did you know that you can just quit the BLE joystick menu and it will run until you power cycle or turn off your radio? (also the elrs radio transmission shuts down)
Just FYI for anyone - when you go to add the Bluetooth device - it's *not* initially called "ExpressLRS Joystick". It's called something generic - something like "Bluetooth device", and after you connect to that device - it renames itself to "ExpressLRS Joystick".
Is it possible using wifi instead of bluetooth? I'm very begginer knows nothing. I just think wifi is better than bluetooth if possible. and there is an wifi option too.

ExpressLRS transmitter appears on Windwos 11 as Game Controller with 8 Axis and 0 buttons.
and the axis are assigned
0 - Aileron stick
1 - Elevator stick
2 -
3 -
4 - throttle stick
5 - Rudder stick
6 -
7 -
or possibly
1 - Aileron stick
2 - Elevator stick
3 -

No, it's bluetooth only.

Not out of the box, but if you add an external ELRS module it will.
