    Made this tonight....only exception was I used a little leftover cranberry sauce in the glaze ....it was an unbelievable success...chef John you’re amazing...I’ve made one of your recipes every night since Friday...and it’s wed night now... started off with your fish and chips....best ever and even ventured to make the beer braised lamb shanks...but opted for red wine instead....I’m thoroughly addicted to your channel...thank god I’m on holidays right now... dinner will be back to boring next week...please do some busy night dinners...in under 45 min start to finish...😍👍 I’ll keep watching no matter what ... you’re so appreciated ❤️

    I made this tonight for my family. It was my daughter's birthday and we were having an "Iron Chef' potluck where everyone made something with the theme ingredient of 'cranberries'.     I used my favorite sliced salami and diced slices of sundried tomatoes with creme cheese and white, pink, green & black pepper blend. It was an amazing combination and everyone loved it. I used to make this by just slicing a deep cut in the porkloin but this way of pounding it out is so much better! Thanks for the amazing tip!

    Didn't watch but I'm in a bad mood so I decided to tell you that bacon wrapping pork is the most inventive thing I've ever heard of. I wish other people would wrap bacon around pork. Very innovative!

    ....a quick note/ update from my last post. This REALLY is a keeper!! As much as I loved it for dinner last night....If there is anything leftover, It 's fabulous sliced very thin after spending the night in the fridge....perfect as a party platter along with mustard and pickles, fresh crudites etc. Keeping this idea stashed for holiday festivities...... .

      Dried apples or pears would work for sure. Fresh ones are going to be too watery. Apple cider vinegar with a slightly diluted bourbon. Mmmmm.

    I tried this yesterday...I just happened to be thawing two pork tenderloins, and I am glad I searched your site for it. Your recipes are always spot on, and relatively simple--even though there are no "measurements" or ingredient list. I have always found your directions make the food come out perfectly (and delicious). I did one identical to how you did it in the video, and the 2nd one I added diced celery and onion ( we love the crispy crunch it provides). Perfect, perfect, PERFECT!

    You can also stuff it with goat cheese and sun dried tomatoes jarred in olive oil. Absolutely awesome!

    I bought a pork tenderloin yesterday and will fix this tomorrow night with yams and a nice Romanesco from my neighbor. I have all ingredients on hand. I always roast walnuts, pecans, almonds, & cashews for flavor. Will post photo on Twitter. Thank you, Chef.

    Made this yesterday. Everything went wrong along the way (could not find a smacking implement, didn't butterfly quite enough, breadcrumbs packet turned out to be empty and merely decorative) and yet it was still delicious (if a little shaggy) at the end of the day. So thank you for sharing a recipe that still turns out well when you only have about 9 minutes of (rather incompetent) prep before you have to head off.

    Wow. This one is an absolute CJ classic. Delicious food, liberally seasoned with our favourite chef's dry wit. "You are the Björk, of your mummified pork" is contending for best of chef's corny rhymes, not to mention other tid bits like the video tip toward the end. Oh and btw, I WILL be making this recipe tonight. One thing they get right over here in Germany is their pork, so this is one inspiring addition to the Chef John oeuvre .

    I tried this on Friday night and it was absolutely amazing!!!! The pork was so delicious and tender. YUM! I used leftover turkey stock and cranberry sauce for the pan sauce (Canadian Thanksgiving was last weekend) and it paired beautifully. Will definitely be adding this dish to my roaster.

    Chef John thank you for that inspiring video. I did not have a few of your ingredients so I put some together of what I did have, started with S&P, did the mustard rub an all i had was panko bread crumbs ( thanks for that tip to keep the juices in the pork!)A mix of spices that I had that smelled good together. For the gravy applejuice for the wine, dijon mustard as you did and S&P and blasmic vinegar and a drizzle of a balsamic glaze on the pork before bacon wrapped and after cooked. Calling it Spiced Pork with Apple Balsmic Gravy. Will have to let you know how it tastes once it is done.

    Great recipe Chef John! This is one of the best fall/winter's night meals :) When it's cold outside and the fire is lit and the smell of this cooking in the oven ... it's what winter is all about.     Holly shit! Excuse my French chef Jon. I made this today and eating it now and it’s SOOOO DELICIOUS!!!!!!!❤️❤️❤️ my husband and friend love it!!!!
    It was easy to make, I fought a bit with the sauce but I think the butter mellow the vinegar because it taste like grape and slightly sweet. PERFECTION.

    I saw this recipe and I knew that's what was for supper tonight, since i had the tenderloin out and was going to do it w/ cranberries, apples, red onion and bacon wrapped tops w/ super course cracked pepper. I don't have walnuts now (bummer), so I subbed w/ pine nuts,w hich should also be awesome.. Sour cream and chive scallopped potatoes on the side, yum. Can't wait. Will try and update.
    Edit: My pine nut version was absolutely delicious and as suspected, my sour cream and chive scalloped potatoes were perfect w/ them. This is going on the table every Christmas and Halloween and would make an amazing potluck dish. Can't wait to try it w/ walnuts next time. I usually always have walnuts for baking, but oh well.
