She is more honest than we're used to from other guests. Conan seems to be caught off-guard a little, but generally he is the best host for more honest interviews.
I'm sure she's a nice girl but man, it feels awkward just listening to her.

The reason she is awkward to listen to is because she is (seems to be) more honest and less used to talk with a camera recording every word she says. She is used to actually talk about what she really feels like. You see it when she says "It's odd, because I only want my boyfriend" and that is the first time I see a celebrity actually address that having someone else touch you or kiss you in a movie is problematic. Celebrities are supposed to act a certain way and censor parts of themselves and Olivia failed to do so by addressing the problem of having another man touch you, when you are in a relationship. I do not think actors are supposed to address that problem, which is why you see right after the video Conan whispering to Olivia, most likely telling her to be careful around that. I mean, look at Gal Gadot. She is married but never talks about how awful it is doing things with other men, even though she is in a relationship.

Munn had so much confidence on Attack of the Show but ever since she's become an actress, she's been much more reserved.
There's no hot dogs dangling from the ceiling anymore. Probably that.
Her and Kevin had such great on-screen chemistry together. I think that plays into it. They worked together every day for several years and she knew what was expected of her, she was comfortable at AOTS.

Besides, when you host a show, you're still 'putting on' to some degree; i.e. being more animated than you might be in real life. If you look back at most of her appearances outside of AOTS some years back, she's always been like this.
