Irish Guinness Pot Roast for St. Patrick's Day

1 Large Onion
4 Cloves Garlic
4 Carrots
4 Stalks Celery
1 lb Baby Potatoes

Thanks for the view. Yeah, as much as I enjoy Corned Beef and Cabbage this is more of what a traditional St. Patrick's Day Meal would be in Ireland and especially on a Sunday.
