How to Cook Picanha on the Grill | Barlow BBQ 4K

- The top sirloin cap, AKA picanha is a cut of beef first made popular in Brazilian steakhouses where it is skewered and cooked over an open fire. We are a long ways from Brazil here at Barlow BBQ but we wanted to try a recipe that would be similar to the traditional "churrasco" style.

Traditionally here in Brazil the skewer method of cooking is done by putting the skewer over a very hot fire, usually rotating, with just coarse salt, when the outside looks good, you take it off the fire (middle still raw) and cut thin pieces onto the plate, resulting in a medium rare to rare side and the other side with a bark, you should try it next time, cheers
When you cut both sides, just chuck more salt over the exposed raw outside and right back over the fire

Any kind of coarse salt should work
Kosher salt is coarse salt. Same thing different name.

We usually have some salt flakes around that we finish our steaks with after they've been sliced, unfortunately we were all out for this cook. Are the salt flakes the same as what you're talking about?

Where do you find picanha?
Look for the top sirloin cap or rump cap
A whole picanha should be triangular, they grab that whole muscle and cut it on the third vein coming from the tip, but looks like the same muscle roughly, maybe the butcher didn't know that?
We ordered this from a meat delivery service. I can't tell you what the butcher did 🤷♂️
