  • The top sirloin cap, AKA picanha is a cut of beef first made popular in Brazilian steakhouses where it is skewered and cooked over an open fire. We are a long ways from Brazil here at Barlow BBQ but we wanted to try a recipe that would be similar to the traditional "churrasco" style.
    If you haven't tried this flavorful and unique cut, you are in for a treat!

    Traditionally here in Brazil the skewer method of cooking is done by putting the skewer over a very hot fire, usually rotating, with just coarse salt, when the outside looks good, you take it off the fire (middle still raw) and cut thin pieces onto the plate, resulting in a medium rare to rare side and the other side with a bark, you should try it next time, cheers

      When you cut both sides, just chuck more salt over the exposed raw outside and right back over the fire

      It was as close to traditional as we could get without a proper spit. Turns out awesome every time tho!

    Hi. Thanks for the video. So what do you UK guys as Kosher salt? Sea salt? Rock salt? Something else? As a UK grilla just trying to find a "kosher" replacement. Thanks again.

      Hmmm that's a good question. We're not fun the UK so I don't know what the alternative would be. Sorry!

      We usually have some salt flakes around that we finish our steaks with after they've been sliced, unfortunately we were all out for this cook. Are the salt flakes the same as what you're talking about?
      I really enjoy cooking picanha and I appreciate your comment! Thanks!

    Where do you find picanha?

    • @BarlowBBQ
      @BarlowBBQ  Před rokem

      Look for the top sirloin cap or rump cap

  • @FeatherleszBiped
    @FeatherleszBiped Před rokem

    A whole picanha should be triangular, they grab that whole muscle and cut it on the third vein coming from the tip, but looks like the same muscle roughly, maybe the butcher didn't know that?

    • @BarlowBBQ
      @BarlowBBQ  Před rokem +1

      We ordered this from a meat delivery service. I can't tell you what the butcher did 🤷‍♂️

  • @seandesborough9661
    @seandesborough9661 Před 2 lety

    It’s the cap from the rump

      U said it’s from the sirloin it’s the cap of the rump

    • @BarlowBBQ
      @BarlowBBQ  Před rokem

      It goes by a few different names: top sirloin cap, rump cover, rump cap, or culotte. We are both right 👍

  • @aaronshelley703

    We overthought this didn’t we? This isn’t a swarm-a or gyro. Why would you slice with the grain on this type of cut?

    • @BarlowBBQ
      @BarlowBBQ  Před rokem

      No overthinking, Aaron. Just having fun with it 😜
