Is this primarily for aesthetic purposes, or is there any hygienic / sanitary reason why surface discoloration is problematic? In other words, if I rinse off my JaDeD chiller right after using, is this something I should still do periodically, or is it really optional?
This is primarily for aesthetic purposes. There's no reason to be concerned of typical dull/cloudy patina on the copper surface as far as a health, or beer quality is concerned. The harmful discoloration to be aware of is green. This is called verdigris and it's not very common on wort chillers, but it can be toxic if it's not removed.
I wish your products where sold at a decent price here in Europe. The price for a Scylla (not including shipping) is around 340 USD which is nearly twice the price than on the US market. The market for such products is huge here, but I am fearing that at this price point we are seeing here in Europe currently it is deterring a lot of people from jumping on such a product.

I've found that it is fairly easy to clean my Hydra. I also refer to those stains as "brew freckles" and use them as a badge of honor. Cheers
