The more you learn about the animal kingdom, the more uncomfortable you will become with the usual handwave arguments for sustainably or ethically eating them. Cows are smarter than they look. Pigs are HELLA smarter than they seem. I don't think it's a coincidence that one of the precursor requirements of domesticating animals for livestock and farming use, is that creature is typically a social herding creature. Think of all the parts of your brain that have to develop to navigate living in a world occupied by dozens of your own kind. I don't eat mutton because I don't care for the flavor. But now it helps to know they're little fluffy clouds of love too.

Sure we feel empathy, but meat is part of our diet whether you like it or not. These animals were domesticated long before our time by our ancestors who lacked the moral high ground and intellect of animal physiology we have today. At the very least, we are maintaining a food chain that could have had many farm animals being hunted to extinction by predators. Humans have caused many animals to go extinct, so shouldn’t you be thankful we are intelligent enough to keep them around as a food source instead of gunning them down for sport to extinction like humans did to the dodo bird?
