FYI, Bearing manufacturers do not over pack the bearings with grease as it will cause drag and heat. I use to have the same philosophy as you but sometimes less is more.
It's amazing that you can buy a new bearing that has almost no grease. Makes you wonder what other short cuts they're taking.
The bearings that came out of the bike were bone dry.
Does it matter which side of the bearing sticks out or goes in

nice content, at 3:42 when you remove the spacer, it comes out easily, is that a sign that the seal has worn out?

how long did you torch it out?
Just needs to get some heat in it not to much
If you have a MIG gun run a beed around the inside the outer race
