      Well, SC is also known for the vinegar based variant, but normally when you mention Carolina Style you're referring to the mustard based goodness. He could have used both and I wouldn't have minded.

      If you're down here though, definitely swing by Hemingway and visit Scott's BBQ. It's closer to the vinegar based than mustard, but that's okay! Melvin's BBQ in Mt. Pleasant has a mustard based that is great. My favorite mustard based sauce is from King's Taste BBQ in Eustis, FL.

      I'm from the region in AL where white sauce originated. It's great that he's recognizing it, but...it's not really for pork. It's essential for smoked chicken! That's where it shines and is meant to be.

    Since I started watching this show a few years ago, I've achieved a healthy weight after several bouts of cancer because watching someone make delicious food and then being able to make it myself has made it so I could eat even on the bad days.

      From Alabama here, my only problem is that I have never had pork her that was just salt and pepper. No clue where he got that idea from. As far as sauce goes, white sauce is tasty but I normally go for the red if I do sauce at all. The best pork doesn't need any sauce imo.

      @@carbon2858 for red porks and beef, I’d never put a white sauce on it. Red sauces, or just a simple vinegar would suffice. But it should be amazing without the sauces, to your point. I really want to make some smoked chicken and make the white sauce though. His recipe did sound amazing.

    Just FYI, Kansas City style barbecue sauce usually includes Tamarind for a little bit of tanginess. Memphis style BBQ sauce does NOT but definitely goes heavy on the molasses or dark brown sugar. We rely on the coleslaw on the sandwich for the tanginess.
    Had you taken a regular white bun, put a little sauce, pork, sauce and slaw on it, you'd have a classic Memphis sandwich.

    In my experience, we usually use white sauce for smoked chicken/turkey in Alabama, not pulled pork itself. That almost always gets a traditional vinegar-heavy red sauce. It's definitely a weird and not-fitting taste for pulled pork, but is absolutely incredible on smoked chicken and turkey, in my opinion.

      Could be, just maybe, that people eat what's available to them? Even as a kid I preferred mustard based sauces. So maybe people just eat what they like and it just happens that most of SC prefers a mustard base. 🤷‍♂️

      The mustard sauce is primarily in the Midlands around Columbia. The Upstate and Low Country don't really do the Carolina Gold.
      I've lived in Sumter, Columbia, and Greenville.
      The best bbq in the state IMO is from the Schoolhouse and is not mustard based.

    I work at UPS loading trailers in North Dakota, and I was surprised to see a Babish culinary box. It put a smile on my face so I made sure to treat it gently.

    The Alabama white is really to be used with smoked chicken. For pulled pork, we tend to use a thin, apple cider vinegar based sauce mixed with brown sugar and some spices plus varying heat from added dried cayenne or othe dried peppers.

    I'm from western Kentucky, we use Memphis style dry rub but a tomato based BBQ sauce. But also usually mop the pork VERY LIGHTLY. The idea is to have the pork be very soft and tender because we usually use the pulled pork in stew or "Bourgeois" but some do also like it on sandwiches.

    SC has 3 different bbq styles, NC has at least 2. As a South Carolinian who attends college in NC, I have absolutely no clue what other states define our barbecues as being.
    SC:
    -mountain/foothills= tomato base
    -Columbia= mustard base
    -swamp/ beach area= spicy vinegar base

    Vinegar mop isn't just a South Carolina thing, that's also done with North Carolina bbq too, hence it's just Carolina-style BBQ.

      I mean. South Carolina has 4 official BBQ sauce “brands” due to the different regions in which they came from. English vinegar and pepper, Irish Ketchup, German Mustard, and Paprika dry. But yeah Vinegar like that is more NC than SC

    To be fair to Babish, the SC midlands do have a strong vinegar based sauce following. It's really just Eastern Carolina BBQ, both north and south. Then you have the western Carolina mustard sauce which is also amazing. The sandwich looked great, though I'm still not sold on whatever the heck it is Alabama is doing.

    You're in the clear -- Eastern/coastal SC follows the eastern NC vinegar style, which is the same I grew up on (Dad from Georgetown, SC who also swears by vinegar style). The Spartanburg/Greenville areas sometimes tend to go for the Lexington-style which is similar to vinegar-based but with some tomato added. Central SC (boosted by Maurice's in Columbia and other bands where German immigrants settled) has the mustard-based stuff, but there's plenty of vinegar sauce in SC and not just NC.
