    Your voice is calming and somewhat encouraging. This means a lot to me. I have a two tier wedding cake due tomorrow. Its fully frosted and freezes. I’m suppose to stack them at the wedding. Im very nervous coz its my first time stacking a cake with dowels. Thank god i watched this video. You gives me confidence.

      Fantastic tutorial! I am making a 3 tier (10, 8, 6inch) red velvet with cream cheese icing. I am wondering about the effectiveness of the cream cheese icing. Do you think it will keep firm? Like one of the previous posts I'm supposed to stack at the venue ( which is a bit scary!) Will this freeze well? I have always made it fresh on the day as a 2layer. Thank you

    I just love your videos! That cake is beautiful.
    My grandson just told me his friend would like me to make his wedding cake in about 11months. I got nervous cuz i just started this whole baking thing, starting with cupcakes and a few cakes. You make me feel like maybe I COULD actually make one after some/lots of practice. Thank you 🥰

    Thank you for this great video! I kept finding videos that required the wooden dowels which seemed so daunting; I’m excited to try it with milkshake straws like you used! Quick question- if I’m making a two tiered cake, I would just use the dowels in the bottom cake? Do you include the cake board on the top cake or remove it before placing on top? Thanks!

    If I use home made whipped cream instead of butter cream, can I freeze the cakes to handle them the way you did with the buttercream when trying to stack them?

      I do not because my cakes are made with buttermilk and are very moist already

    Do you find that freezing your cakes ever makes them dry once thawed? I’m always hesitant to do it but I see so many people doing it.

      As long as it's covered in buttercream it will be fine! Or if your freezing it uniced wrap it well with plastic when they are a little warm to trap moisture from the steam and wrap with a last layer of aluminum foil. I find that they taste better when I do this. Good luck!

      You have to remove the tier and cut it

      Yes you do, she mentioned it but didnt demonstrate. Just the same process but as the top cake is lighter you can do 3 or 4 straws

      Just let it defrost enough to be able to put the straws in.

      No but it’s not hard to do. After stacking the second tear measure out a wooden dowel and stick it on top all the way down to the bottom before putting the top-tier on

      I would recommend watching cupcake jemma's video if you want a center dowel (the video has masterclass in the tile) . She has a detailed video that tells you how to do it with a cake board under each tier for more support.

    Good job ma’am.
    I get scared to freeze my cake. Thinking it will melt or have water batches once out of the freezer. Pls note it’s hot in my country here. Africa. Nigeria. Thanks I await your reply.

      It’s OK to keep it in the fridge. If you’re going to put it in the freezer you just need to warm it up slowly to prevent sweating so move it from the freezer to the fridge and keep it there as long as possible

      I would keep the cake in the fridge for a few hours after decorating and then it’s ready anytime after that

    Since the cake is frozen, do you leave it out at room temp or put it back in the fridge before serving?

      Cakes should always stay chilled until about 20-30 minutes before serving
